    I'm doing spaghetti. One hour prep and it feeds the hubby for days. He's on call this week so there is no telling when meal time is.

    My kids’ new summer favorite – grilled pizza. I use the $1 dough balls from HT and divide to make 4 small pizzas. Roll thin, brush with olive oil and grill one side for a minute, flip over and put the toppings and cheese on and grill until the cheese melts. The kids each pick their own toppings from whatever meats or vegetables I have on hand.

    I'm using up some things from the produce drawers before heading out of town for a few days, so it's beef stew in the crock pot for us tonight! Beef stew meat from the freezer, red potatoes, sweet onions, mushrooms, baby carrots from Aldi over the past couple of weeks, and we'll have some Rhoads rolls from Lowes SD a week or two ago.

    Juanita - Instead of stuffed peppers how about just browning the beef, add onions, canned tomatoes and some diced peppers. Fix rice and mix it all together. Basic filling for the peppers without the whole pepper. OR you can brown the meat, add a can of cream of mushroom soup, sour cream and a little broth/milk and serve over egg noodles.

    @ juantasmith -

    ground beef empanadas

    brown the beef with onion, olives, and other veggies - add some spices and stuff in biscuit dough (rolled into thin rounds) serve with salsa and sour cream

    junitasmith, I have a fantastic recipe for sloppy joes--puts manwich to shame. And you can cook it then encase it in dough (any type you like) and bake it to make it less messy.
