    Last night we had the Publix's $6.99 chicken and buy one get one southern style potato salad. Tonight is Walmart marked down boneless pork chops (not sure of correct name) 18 for $6 and husband's green beans, Mmmmm..... the free container of potato salad and a loaf of swiss bread from Stick Boys. Enjoy what's left of your weekend. God Bless

    It was lots of fun. She was surprised and we had a great time. Change of plans for tonight. I feel like making homemade sauce and meatballs so thats what's for dinner tonight.

    And for tomorrow I may copy your crock pot idea Faye and throw some chicken in there with a can of cream of chicken soup and a block of cream cheese served with white rice and mixed veggies.

    Tonight is dinner out for me and maybe the girls if DH has to work. Celebrating a surprise birthday dinner with a friend at Olive garden. Can't wait!!

    Tonight we are all in different directions and I'll be having dinner out with a friend so it's a no cooking night.

    Sunday I am cooking a turkey tenderloin in the slow cooker and I am serving it with stuffing or rice and steamed carrots.

    Hi Acsherer- here you go: it is based off of an old biggest loser recipe from a cookbook I have. Cut up any size eggplant in chunks and spray with cooking spray and sprinkle garlic powder. Bake at 425 for 8-10 minutes flip and cook then same. ( my oven cooks so fast I don't flip and I kind of like my eggplant a little mushy anyway) - combine with any kind of tomato you want. I usually just do with what I have Roma, regular slicing or even grape tomatoes). Mix with the eggplant and add salt and pepper. Green onions are a nice touch. We usually eat at room temperature and eat by itself or really make it bruschetta by putting on toasted baguette slices. Oh and some fresh basil make it the best!!!

    Tonight's dinner for us will be either turkey hotdogs with some leftover green veggie (broccoli or green beans) or maybe we'll do a pizza.
