Shrimp on salad

    JDouglas - It is called Double Shrimp Casserole because it has Campbell's Cream of Shrimp Soup and cooked shrimp. It also includes egg noodles and chow mien noodles. I will be glad to share the recipe but most people get turned off by the Cream of Shrimp soup. Momma and I love it but my DH is not a big fan.

    jdouglas, the look was not because of the shape. It was because it browned too fast, but was still soggy and oily. I think the mistake I did was not to wait 20 minutes after i rolled them. I think I was suppose to do that so that the rice wrappers dried out some. I waited maybe 10 minutes before frying them. Next time I will wait the full 20 minutes and also I will spray them with oil and put them in the oven rather than fry them. It would make them healthier that way.

    Kathy S., I thoroughly enjoyed reading about your adventures with spring rolls! Thanks for sharing. I'm wondering if you turned the rolls to diamond shape rather than squares, and then tried to roll. Would that improve the looks?

    Faye, breakfast burritos sound really good.

    Tonight we are having the roast chicken dinner I planned to have last night. Last night ended up being pasta carbonara. I also made DW's fave buttermilk cake with mocha frosting today.

    cont'd.... Ok I give I will look up on the internet how to work with the wrappers. Oh it says to put in a bowl of cold water until it softens. I can do that. Great it works. Wrap up more. Now for the frying session. Not so good. Browns way too fast and is soggy. Made 8 that way. Alll soggy and greasy. Now what. My first one was better, but ugly. I know I will put them in the oven to crisp them up. Yes, that helped. Tasted good but looks still get a D- .

    I will try again another time, but found a recipe that bakes/fries them in the oven instead of hot oil. Maybe next time I will try that.

    Okay, now for the misadventures of my first attempt at homemade springrolls. Filling turned out great. I had on hand broccoli slaw, carrots, bean sprouts, napa cabbage, bok choy and rotisserie chicken. Also had La Choy stirfry sauce. Sauteed the Bok Choy, broccoli slaw and carrots, added minced garlic. When almost done added bean sprouts, cabbage, cut up rotisserie chicken and stir fried more, then added a little bit of the stir fry sauce. Tasted yummy.

    Now for the fun part. How to work with spring roll wrappers (rice wrappers). Having never done this before I should have looked this up but alas I didn't. Took one out and tried to bend it. (nope snap, it broke) Well these are about 2 years old what do I expect. :) I know. I will put one between wet towels in the microwave like I do corn tortillas. Worked okay and proceeded to wrap my filling. Then fried it. Came out fairly well. Now for the tasting. Not bad. Crispy, filling good, but looks. I give that a D.

    Faye - Thanks for asking about Momma. She is doing really well. She gets stronger every day but goes from strong to worn out quickly. The Doctors are saying 4 to 6 weeks. Even the PT group is planning on 4 weeks. We just take it day by day. I'm very thankful that I have the time right now to be able to stay for an unlimited period.

    Dinner tonight is a double shrimp casserole with a side salad. I remember having this casserole when I was a kid.

    Tonight I am going out with friends for dinner. Tomorrow night remains to be seen but I am thinking breakfast for dinner. I picked up some BOGO HT brand flour tortillas and turkey bacon with couponsat HT this week and we have lots of eggs from Aldi last week. I'm thinking southwest breakfast burritos with a salad on the side.
