    RaleighFoodBlogger - stuffing would be a good substitution. Glad it worked so well in the meatloaf. I have used it in place of bread crumbs for stuffed mushrooms a number of times.

    Twinredheads- sounds delicious! I'm really missing having a Publix, Lowe's and Food Lion near us. Thank goodness Harris Teeter is so awesome :)

    And just wanted to update on the meatloaf. I did Barefoot Contessa's turkey meatloaf recipe using the turkey on sale from HT. I didn't have any breadcrumbs so I used some leftover stuffing mix (seasoned) instead. Man, it was good! I just cut back a bit on the thyme and salt. Yum!

    RaleighFoodBlogger - I LOVE step aerobics. A few of the classes at my gym incorporate a step. Super workout! And I agree on the artichokes - they would be good.

    Was able to pick up a spiral sliced ham at Kroger for $6 with coupons they mailed me. Since we didn't have a traditional Christmas dinner in London, I'm serving it with rolls, asparagus (on sale at Lowe's through today) and mashed potatoes. Smells really good as it's baking :)

    Faye- the original recipe called for canned artichokes, which also might be good. But spinach would be great as well! And tell me about those pesky holiday pounds! I've been doing step aerobics (yes, like from the 80's). I found some old videos on YouTube (from VHS tapes) and wow, what a difference in a short time. Highly recommend to you all if you're looking for a fun exercise... and don't mind watching women in leotards and leg warmers lol!

    Tonight we're finally having the meatloaf. Some comfort food is in order :)

    RFB - I bet the cream cheese was a fabulous edition. I'm trying that next time! And the spinach you mentioned earlier (I'm not a fan of peas...).

    raesmom1612 - that totally counts as meatballs subs. :-)

    Em2s - I am in love with your falafel, tzatziki and pita meal. Those are some of my favorites.

    I ended up having hard boiled egg whites on my salad tonight. Shrimp cocktail is on the menu for Sunday evening (with another salad - shocking but true!). Those pesky holiday pounds will be gone in no time at all. :-)

    OK, so the cream cheese was so delicious. I used 2 boxes original Annie's mac & cheese, then once cooked and drained I added 3 oz. cream cheese (set out for about an hour), 6 Tblsp. milk, both cheese packets and about 1/2 bag of frozen peas (microwaved). No butter. Everyone loved it, and it was nice to have basically a free meal :)

    I ended up throwing a bag of frozen meatballs in the crockpot with a jar and a half of pasta sauce and called it meatball sandwiches. Topped with mozzarella cheese.

    Faye and RaleighFoodBlogger - The two of you prove the minds of great cooks work alike!! Both inspirations sound yummy :)

    Tonight's meal carries into game night: souvlaki chicken and grilled cauliflower on mixed fresh greens, falafel cakes, tzatziki, and grape tomato garnish followed by green tea steeped with lemon-mango remnants, hummus, warm pita and red pepper pieces for dipping and a small bowl of mint M&M's to satisfy the sweet tooth ;)
