    Faye - Sad to hear you missed your show; though, very grateful it seems you were unharmed during your slippery adventure!! Hopefully, Tuesday's warming temps will find you safely back in motion.

    JDouglas13 - You are generously kind with your words -- truly, necessity of one form or another drives our menus. I've been blessed with culinary experiences with family and friends who've inspired and challenged over many years ... it would be a privilege to share a kitchen with you and each of the awesome cooks here on SmartShopper!

    We had chili Buddha bowls with brown rice, sliced avocados, pico de gallo, raw spinach, shredded Mexican blend cheese, the last couple of jalapeno poppers sliced as garnish, and hot flapjacks for dessert.

    We did burgers on the stove with tator tots and cucumber slices. Can't believe school is cancelled tomorrow!!!!

    EM25 and Faye- thanks! Yes, fluffy snow :) We have a generator here, but we didn't need it, thank goodness. But, we still might be stuck here for another few days since the roads are so iced up. First experience using the broom to get snow off the satellite dish. Nice to have TV back lol! :)

    Chili & Cornbread - warm the tummies while we hibernate!

    5" snow extreme N. Wake Co. At least we skipped all the rain and sleet!! Just a slight amount of sleet right at the beginning.

    Tonight we had lasagna for dinner. I got all most all of my homework done for school ( going for medical assisting) was also very glad to see Wake county closed school tomorrow which means I'm off work!!!

    EM2S, I would love to get together and cook with you sometime! Your menus and recipes are always so cool and creative.

    Last night's soup was REALLY good. Cheese veg chowder with ham. Who knew what a difference some cheese would make! Super frugal too. Homemade rolls. Coconut pie, which I finally did right! Turns out my tempermental ceramic pie plate needs about double the baking time.

    Although we did not get a lot of snow, the country roads here are an icy mess. So glad I rescheduled my early week appointments. I'm hoping -- maybe -- to get out to SD for one quick round on Tuesday. We'll see...

    So what's everyone doing for dinner tonight?

    The beef roast has been in the crock pot with celery, carrots, onion, garlic, mushrooms and wine since last night. I will add potatoes closer to serving time. That will be dinner tonight along with butter beans.

    Keep warm everyone. The main roads in Cary were in good shape last night but the neighborhood streets are really bad. Be safe.

    We got very little here in Joco - enough to make the roads wet and dangerous when frozen. Soooo thankful the electricity has been on all day! Tonight we had mac & cheese and salad.

    What a fun day spent in our almost 2 inches of snow!!! We had pancakes for breakfast and pb&j lunches. Made a healthy chicken and broccoli dinner with brown rice. I love these kinds of days. My kids play hard outside - there are nice breaks inside for cleaning and relaxing - and quality family togetherness..... I'm in heaven!!!! Stay warm all!

    JDouglas13 - I'm going to keep your crustless coconut pie on the q-t...otherwise, my crew will be hazarding the icy roads to get to your table ;)

    After a week here of flying by the tail of my apron and re/creating dishes from way-too-much-New Year's Eve/Day meals, preparing from scratch tonight. Have a simmering pot of soup similar to yours, Jdouglas13: fish-corn chowder (huge package of fresh fish on deep markdown at FL yesterday). Baking as I type: parm-tomato topped polenta dish and jalapeno-poppers (Kroger bag of peppers markdown). Have a stovetop hot beverage concoction of crispy apples (a Lowes Foods markdown medley) brewed with slightly chopped cheese-cloth-wrapped cranberries (from freezer) and well-washed clementine rinds in cheese cloth. The wrapped fruit and intact apple slices will be extracted for future dishes.
