    I found some homemade chili in the freezer. That is tonight's dinner with corn bread. Since it is the last of the chili, I will make a big crock pot of it again this week.

    Everyone's dinners sounds great tonight. Especially that BAKED ZITI and fried coconut shrimp!! We had mushroom ravioli and spinach tonight .

    We are having baked ziti tonight with a green salad full of veggies on the side and for dessert......yup more cookies lol

    Funny all the talk of the chowder. My niece is coming to visit in two weeks and the one thing she asked for me to make her was my corn chowder. I purchased everything but the potatoes (i don't think they would last two weeks).

    Jdouglas- sounds delicious! I've never used instant mashed potato flakes- what a brilliant idea as a thickener! :)

    RFB, no real recipe for the corn & shrimp chowder. I ended up having something else for dinner, but the plan was to saute an onion in a little butter, add homemade chicken stock, a bag of frozen white corn, some large-diced Yukon gold potatoes, maybe a little thyme. When the potatoes were soft, add some half & half or cream, instant mashed potato flakes to thicken if needed, and the shrimp until cooked through. Some crumbled bacon on top would be nice. Pretty much just a corn chowder recipe with shrimp added to it.

    Tonight we're having a small boneless pork loin roast with sweet potatoes, possibly a salad with arugula, oranges, pomegranate, and a citrus vinaigrette.

    I really enjoyed seeing everyone today. It was so much fun. My sweet husband cooked supper tonight which consisted of a dish he came up with that is like goulash, mashed potatoes and corn. We had cookies for dessert of course. They are all delicious. Sorry that you aren't feeling well Ascherer. I hope we can get together again soon.

    Jdouglas- would love your chowder recipe! I'm all about less hands on in the kitchen these days!

    And I made a Pork Fried Rice using the leftover Mustard Balsamic Pork Chops. They were pretty darn tough yesterday, but when diced up small in the fried rice, they were AMAZING! Something about the marinade added onto the Asian flavors was delicious :)

    Dinner for tonight are Fried coconut shrimp, Chinese sesame chicken with broccoli over white rice, and dessert also cookies! Butterscotch cookies, white chocolate chips cookies and chocolate chip cookies that just finished while typing this message.

    Faye, thanks for hosting the swap today! It was fun seeing everyone and getting to sample the goodies. :)

    I'm hungry, but really not in a cooking mood (again), so I'm wracking my brain for something to throw on the table tonight. Yummy and effortless would be perfect. I'm thinking about a corn and shrimp chowder, since basically I just have to add stuff to the pot with not much hands-on effort.
