We finished up this week's turkey & fixings last night ( some left for sandwiches but no more suppers)

Tonight is grilled shrimp, grilled asparagus and tater "cakes".

I have a corned beef to cook tomorrow since we had to make room in the freezer for the massive 19 lb. fresh turkey DH found on sale at Kroger ( 70% off ).

**Any suggestions on how to fix the corned beef ??
I used to cook it like MIL did (top of stove in big pot) ; NOW I cook it in the slow cooker - pouring off the water and adding fresh after a few hours before adding the veggies.
**Can I make jerky from it afterwards ?? DH might love that ...
    Thanks !

I think we are about done with the turkey and moving on to chicken tonight. We are having Chicken Ceasar salads with a side of crescent rolls.

ybaverage2003 - I hope you had a lovely Thanksgiving Part 2 last night with your family traditions!

Likely having the last of the turkey with mashed potatoes and salad. My youngest loves mashed potatoes so those are for her. I may make another turkey and Swiss melt on rye for me because it was soooooo good for dinner last night. Or maybe that will be lunch because I don't want to wait until dinner. LOL

RaleighFoodBlogger - I think both of my kids would be happy if I served Caprese salads for dinner every night! And your rosemary potato wedges sound so good.

Today and tomorrow I'm trying to use up some various ingredients. Of course, turkey sandwiches for lunches! But for dinner tonight we're having Caprese Salads. And tomorrow roasted chicken cheddar sausage, rosemary potato wedges and broccoli.
