    RaleighFoodBlogger - I just saw your post about your move and your parents. You are all in my thoughts. It is so tough to see a parent succumb to dementia. My grandfather had it and I am so grateful that my parents could take care of him, first in their home and then in a more appropriate facility. They are lucky to have you. Sounds like this is a very good time for the pantry challenge to continue.

    And I will certainly keep your parents in my prayers. You stay strong as they go through this transition in life. Its going to be different for you to see them like that but staying strong will keep you and your DH sane, lean on each other a helps. Here if you ever need know how to find me ;)

    Thank you so much for sharing that link RFB!! Those butterflies are so gorgeous and that waterfall, I need to see it in person!!!! Rae would love to see the butterflies. She like to chase them lol. Thanks for the dinner offer, you are too kind. I'm thinking we will go up sometime late October early Nov and stay a night. I'll keep an eye on that site to see when would be best. Can't wait!!!

    Raesmom- thank you! It's been tough, Mom is having bad memory problems and my dad isn't far behind. Glad we are close enough and unattached enough to help out :) And yes! If you're out our way in the future, let me know. We probably won't be moved until mid Nov., but you and your family are always welcome at our dinner table :)

    But in the meantime... the leaves were already starting to turn as we drove down the mountain yesterday. It will be glorious in a few weeks! Here's a fun website that has updated photos for leaf-lookers (like us!)

    RFB wow moving to Asheville??? Good luck with everything out there. I have been telling DH since the beginning of summer that we NEED to go out there this fall for a weekend. Living in NC over 10 yrs and we've never visited the mountains!! Hope you parents are doing well!!

    No food truck rodeo for us today. We all took a long nap and woke up at 4pm by the time we all get ready it's gonna be about 7 and food truck rodeo is over at 830 :( We will definitely be at the last two for the year (durham and raleigh both have one last one in october)

    Faye- that sounds delicious. Cream Cheese puts it over the top- yum :) And thank goodness for the cool weather... I'm so excited for the upcoming holiday season!!!

    Observant- thanks for the roast reminder from FL. Heading there tomorrow. Can you freeze those?

    Raesmom- so fun on the food truck rodeo! Hope you make it, and YAY for Fall!

    And we're having a frozen Blake's Shepherd's Pie. Yes, it's frozen food (and not very frugal) but I really like them (found at Publix or I've seen them at Walmart). Long week travelling to the mountains and back, and we're taking it easy today.

    And we're moving back to Asheville to help take care of my folks. So, the upcoming month will be pretty busy as well. I'll be doing my best from tomorrow on to continue on with the pantry challenge so we don't have to move much of our canned goods, etc.

    That's so sweet, Ascherer! I don't think I've ever had homemade hash browns. Yum!

    Your brunch sounds a little like ours Ascherer. We did scrambled eggs, bacon, homemade blueberry "smiley face" pancakes and cinnamon rolls. I know it's pretty much breakfast but for the first time in ages we slept in (til 10am, that's pretty good for having two kids lol) so we didn't eat it until about 1130.

    No idea what's for dinner. There is a food truck rodeo in Cary so we *might* try to make it out there. If not I'll have to make a quick run to the grocery store since all meat in the freezer is still frozen.

    Hooray for fall!!!!

    Our big meal today was brunch. DH made scrambled eggs with cheese, sausage patties and homemade potato hash browns. I do love this man. Dinner will be leftover pizza from Ruckus on Friday night.

    Faye, that pic of your homemade veggie soup is a thing of beautiful deliciousness LOL :)

    Dinner tonight was intended to be a roast chicken that I've been defrosting for TWO DAYS. Still not defrosted enough to even wiggle a leg yet, and I think it has a pack of innards I need to remove. Sigh.

    I think I'm going to need a plan B...
