    Thanks yall!! Normally when I make it, I make it again that same week bc it's soooo good lol

    Tonight is pinterest inspired dinner and dessert. Dessert is a lemon pie (super easy, 2 cans of sweetened condensed milk and 1 cup of lemon juice, poured into a Graham cra cker pie crust refrigerate for 3 hours, top with cool whip) and dinner is a ravioli bake. Layers of sauce, frozen ravioli, shredd cheese in a 13X9 pan in the oven at 350 for 30 mins. I also found a sour cream cucumber and onion salad that I made for me to snack on, but I used Greek yogurt instead of sour cream. It needs to sit for 24 hours so I'll be trying it tomorrow.     Last night's menu was cajun shrimp (thanks for this idea, Faye!) with veggie pasta salad, table grapes, garlic knots (thanks to HT for the $.97 dough balls) and Mayfield ice cream. Tonight's meal is thanks to great buys mostly from Kroger: whole rotisserie chickens ($2.50 ea with coupons), steamed brussel sprouts (one free frozen package and one at $.60 with Kroger coupons), stewed potatoes (these were a special from HT a few weeks back), crustini (made from a reserved subroll - discount bakery package), canteloupe and Outshine fruit bars.

    Hope everyone's week gets off to a great start!

    Tonight is grilled pork chops, buttered corn, and garlic and oil Pasta with biscuits.

    Tomorrow is crockpot bbq chicken, home made Mac n cheese, and baked beans.

    I go back to work Monday so next week's menu will be easy and quick meals.

    Raesmom - your corn chowder recipe does sound good!

    Gator Girll - your clam chowder and chicken salad both sounds great!

    Tonight we are having homemade veggie pizza with steamed carrots on the side.

    Sunday night it's homemade mac & cheese at the request of my 14 year old who starts back to school on Monday.

    Ascherer, I've never had corn chowder other than what I've made up myself, so I'm not sure how it compares to others. My version has corn, potatoes (and instant potato flakes as a thickener), onion, broccoli or asparagus, chicken broth, milk or half & half, and bacon. If I were to freeze it, I would leave out the potato flakes, milk, and bacon and add them in when ready to use the chowder. Usually I crumble the bacon on top when ready to serve. I thought the next time I make it, I might use the immersion blender to puree some of the corn, and to lightly saute the corn first for more flavor, but neither are necessary. It's a really easy soup to make and doesn't take any longer than making homemade mashed potatoes.

    Dinner today will be a pork tenderloin with Mac and cheese and brocolli. Nothing fancy but we will be fed :)

    Ascherer-I got my corn chowder recipe from a Hawaiian lady I met while I lived in TX. It is as follows:
    8-10 potatoes cut up into bite sized pieces rinsed (i use red and keep the skin on but you Can peel them if you'd like)

    2 cans of corn (or one bag of frozen corn)

    2 cans of creamed corn

    1 small can of evaporated milk

    1 package of bacon

    Half an onion

    In a pan cook the bacon and onions together until bacon is done and onions are translucent. While cooking bacon and onions, put potatoes in a pot of water to boil. You want them soft but not mashed potato soft. Once potatoes are done, strain but do not rinse. Add the corn, creamed corn and evap milk to them. Once onions and bacon are done, add them to the pot (fat and all). I add Adobo to mine for taste but you Can also use salt and pepper. Mix it all up and let it warm through and that's it. Easy peasy!!! If you have some cooked chicken breast on hand (shredded) you Can add that to it, but we know I'm not a chicken fan so.....

    ASCHERER -- I got a great corn and potato chowder from Whole Foods website some time ago. Try a search of their website. I'd give it to you now but we're at the beach for a week and I don't have my recipe file here. Last night I made a killer clam chowder to share with friends who came by for supper. I also made a chicken salad with celery, green onions, grapes and toasted slivered almonds for a friend who said she didn't like clam chowder but she sure ate up the clam chowder instead. Tonight we're dining out.
