We are being treated to dinner again tonight. Our house guest is very generous. I think he liked me saving the Cookie swap goodies for when he shipped back home or the care packages I shipped over in 2105. We are just glad to have him back in NC so he can come visit.

I hope everyone had a wonderful weekend.

JDOUGLAS - they were your standard baking potatoes. I had used two of them the night before (I made potato soup because my hubby had stomach issues) and had no problem with them.

Tonight we're having meatloaf sandwiches with chips and a cucumber and cherry tomato marinated salad. I'm feeling lazy!

GatorGirll, that's odd about the potatoes. What kind were they?

Faye, do you need an emergency delivery of mushrooms? ;)

Last night we had burgers on the grill, corn off the cob, tomato-lemon-basil salad, and garlic bread out of the BOGO baguettes at HT.

Tonight is not really a dish for hot weather, but I need it. Spaghetti with meat sauce which will have lots of veg in it as well. Too bad we ate the baguette last night that was supposed to go with it! :)

Friday night I was going to have meatloaf with mashed potatoes and sautéed cabbage. I had the meatloaf in the oven and had just put the potatoes on the stove to boil when our power went out. I put the chopped cabbage in a bag in the fridge, cooled off the meatloaf and wrapped it in foil and stuck in the fridge. But I left the potatoes in the water (which hadn't boiled) in the pot. I didn't want them to brown from being exposed to air. Our power was out for 12 hours. The next day I drained the potatoes, rinsed them and refilled the pot with fresh water and put them on to boil. Reheated the meatloaf and fried up the cabbage but the potatoes wouldn't get cooked all the way through. I boiled them hard for a good 45 minutes to an hour and finally gave up. (We had what looked to be slightly mashed potato salad.). Has anyone else had trouble getting their potatoes soft or was it a result of leaving them in the water?

coupon4me - that's too bad about Sushi Kai but glad the other restaurant was good.

We did Gonzo's last night for dinner....not new but we still enjoyed it. We tried a new place for Sushi, Kai, I think... but when we went in it felt like 100 degrees, apparently their air was we jetted.
Tonight we had a ham I baked with corn on the cob and baked beans.

Thanks to the other poster on the deals page about the rebates expiring quickly, I tend to let my gift cards sit. I still haven't received mine from May.

ascherer - glad you had a good Jimmy V's experience last night. Have fun at the banquet tonight.

I am having a baked sweet potato with a dollop of light sour cream and sauteed spinach, kale, mini multi-color peppers and onions on the side. Sadly, no tragically, I do not have any mushrooms at the house right now or they would be included as well ...... :-( It's a veggie kind of night.

Dinner tonight is at the Knight's of Columbus banquet. I'm guessing either chicken or pork.

A friend treated us to dinner at Jimmy V's last night. It was much better than when we were there last time. We had a really good time.
