    Dinner ended up being grilled chicken, stuffing, steamed green beans, and a side salad. The chicken was from the freezer and was marinated in Italian dressing. DH picked up the stuffing and green beans after softball practice. The salad was using ingredients already at the house.

    My tweaks (because you know I ALWAYS have to tweak) is I used plain greek yogurt, zest from 3 small lemons, and frozen (don't defrost) blueberries. I lined the pan with nonstick foil. You want to be able to lift it out of the pan and it is a pretty tender cake. I also made the glaze to taste, i.e. more sugar and a little cream to smooth out the flavor. It was very good!

    Dinner tonight if I make it to HT is chicken rolls - pound out boneless breast, top with prosciutto, Italian fontina or mozz, a few asparagus cut to size. Roll and secure with toothpicks. Dredge lightly in flour, saute in butter just till brown in oven safe pan, bake to finish in mushroom soup doctored with wine, roasted mushrooms, and garlic. Serve over rice.

    raesmom1612 - the sub was delicious! And I had the other half for lunch today. Your dinner at Chipotle sounds tasty as well.

    I woke up this morning and had the urge to cook/bake, which has not happened for about a month since I couldn't eat very much. So far today I have made a mushroom and Swiss crustless quiche, hard boiled eggs for deviled eggs and roasted sweet potatoes, asparagus and mushrooms. I also cut up a cantaloupe from FL and it is perfectly ripe. Next up: banana nut muffins and then egg and cheese tortilla roll-ups. I am trying to get some of the breakfast and snack foods cooked for the week for the kids. I love it when I have time to batch cook. Happy Sunday everyone!

    Dinner this evening will be quiche, roasted veggies and cantaloupe.

    Thank you all for your kind thoughts towards my meatballs and sauce :).

    It was a super busy day yesterday. We ended up at Chipotle which made me happy. I hope you enjoyed your Sub Faye!!!

    Jdouglas that dessert does sound really super tasty!! Do you have the recipe handy?

    Ascherer- I do love a good fruit and veggie tray!!

    No idea what's for dinner tonight. Maybe something with pork chops since I havent made those in a while.

    Frugal20-I missed my invite to dinner yesterday.....all of that sounds amazing!! Creamed cabbage?? How do you make that? I am completely obsessed with cabbage.....but I have the slightest idea how to make it lol. Everytime we go back home my MIL makes a huge pot just for me and that's all the cabbage I get for the year. Maybe I should just ask her for the recipe huh lol

    Raesmom - Oh my. That sounds like something I would do. At least the meatball were salvageable.

    Friday night was a DH Men's Club function. I am glad I put my foot down and requested a veggie or fruit tray for the Ladies. I got lucky and there was both. Chips, pretzels, and cheese is not what Ladies want for dinner. Saturday night was dinner out wherever we did not have to deal with basketball fans. We ended up at Ruckus Morrisville. That worked out really well.

    Since it is supposed to be sunny and cool tonight, I'm thinking something grilled. It will probably depend on what Kroger has on sale or quick sale when I go today.

    Frugal20 - that's a fabulous idea to use French bread for pizza. Much cheaper than the premade crusts. We had a similar lunch today - tortilla pizzas using tortillas (they were on sale for .99 a package recently) and sliced mozzarella (BOGO this week) from HT.

    Made French bread pizzas for Saturday lunch. Bread, mushroom, and cheese from Teeter; green pepper, onion, tomato, and pepperoni from Aldi.

    Saturday dinner: Stuffed peppers, steamed carrots, creamed cabbage, butter/herb noodles, and cheese garlic French bread. Stuffed with sweet Italian sausage and beef from teeter.

    Raesmom, my very deepest condolences over your spilled dinner!! :( Princess must have been in heaven. I hope she tolerated it ok!

    Faye, enjoy your turkey sub! So glad you are able to start eating real food again. Speaking of which, I made a lovely little snack-type cake today - greek yogurt, blueberries, lemon, with a little lemon glaze over the top. Interested?

    Tonight is an easy one for us. We're having leftover baked ziti! :)

    raesmom1612 - oh no!! What a bummer! At least the meatballs survived and you can use them another time. Enjoy your dinner out - you deserve it tonight! Where did you go?

    We had a little change of plans here. I got a BOGO coupon for Jersey Mikes in the mail today and I have been totally craving one of their turkey subs for weeks. Now that I can finally eat one, I am! And a regular sub will last me a couple meals so it's an even better deal. That's my story and I'm sticking to it. :-)

    So last night while I was putting the meatballs and sauce away some how they slipped out of the fridge and onto the kitchen floor!! The lid saved the meatballs from rolling out, but the impact of the pot hitting the ground sent sauce flying across the kitchen. Princess had a fun time helping me clean up. The surviving meatballs will be put in a ziploc bag and frozen to be used during a future spaghetti dinner. We definitely have to go out to eat tonight....I'm too devastated to cook lol
