    Katyshuler - I love the idea of using the pineapple, peppers and chili sauce with the chicken. I have a number of the perdue grilled chicken breast strips from HT SD and I think I will try your recipe with it (using honey teriyaki since I don't have chili sauce)along with some veggie eggrolls I have in the freezer. I do believe that may be Monday's dinner. Thanks for the idea!

    I decided to utilize some of my freebies for dinner. I cooked chicken nuggets (free), then mixed in a pan with canned pineapple (free), peppers, and sweet chile sauce. On the side made jasmine rice and chicken spring rolls (nearly free).

    Raesmom - I hope DH is on the mend. It's so tough to travel when you are under the weather.

    Tonight is just a ham and cheese sandwich with carrots on the side. I am cooking my breakfast for the week tonight. I make my own version of Jimmy Deans breakfast bowls. I am using bacon, sausage, frozen potatoes, and cheese on sale from HT SD. I will scramble some eggs to bring the other ingredients together and then top with feta cheese in individual containers.

    We had Kale & Mushroom Quiche yesterday (my easy go-to meal).

    As I type, I have a yummy recipe from my sister's church cookbook in the crockpot - Chicken Breasts w/ an amazing, yet easy sauce (cream of chicken soup - homemade which is cheaper and healthier, cream cheese, dry Italian dressing packet mix, water, butter), all served over bowtie pasta and a salad....SO good! Plus, we will have leftovers to take to work for lunch. ;)

    Thanks jdouglas. He is a bit better today. I hate that he has to go back not feeling 100%. Tonight I am making old faithful spaghetti with meat sauce a small salad and garlic bread from the freezer. Something quick since we have been spring cleaning all day. 3 rooms and a closet down, two rooms and two closets to go :) Pillsbury chocolate chip cookies for dessert.

    What's everyone doing for dinner tonight?

    I did a small hunting expedition in the fridge-freezer yesterday, and discovered some forgotten buried treasure in the form of a London broil. It's been marinating in tamari, garlic, and EVOO overnight and we'll grill it to have with some kind of big salad.

    I think tonight will be thin crust pizza and tossed salad night while we watch the Carolina-Dook game. Tomorrow will be tacos (with all the trimmings), southwestern corn and refried beans.

    Lol jdouglas....maybe you were trying to be extra healthy with two bags of romaine.

    As much as cooking out sounds great, that's a DH job and unfortunately he is under the weather :( The girls and I are hiding out in the room this weekend and I might make some chicken soup for him and pasta for Rae and I. Enjoy the weather!!
