    My Mom's chicken salad uses ground chicken breast with my Kitchen Aid mixer grinder attachment.
    It has minced apples, boiled eggs, mayonnaise, greek yogurt, apple juice, toasted almonds, salt and pepper. It works with turkey as well. Great for after Thanksgiving.

    I had enough energy (and everything on hand) to make baked ziti today (yes done by 430 pm!!) so that will be dinner for the next 2 days at least. If I can get a quick nap and be up by 630 maybe Rae and I will make a cake or some cookies.....using my kitchenaide, not the easy bake oven lol

    Made a big pot of veggie soup yesterday, so soup and sammies for lunch. Grilling some chicken breast for dinner to put over a big healthy green salad. :)

    Countrygirl10 - My family makes chicken salad with toasted almonds, grapes halved or quartered, and a mixture of mayo/sour cream to bind it all together. I prefer using grilled BLSL chicken. Momma prefers using a whole roasted chicken from the grocery store or Sam's clue.

    I also love an apply, walnut, chicken salad.

    twinredheads - I bet he did love his awesome birthday dinner! And brownie ice cream sundaes are the perfect b-day dessert.

    Tonight we went out to dinner with my Dad in Cary and I had steamed shrimp and steamed veggies - and no dishes to clean up!

    I cooked the Carlie C's chicken breast in the slow cooker yesterday with BBQ sauce, pepper, garlic powder & minced garlic. It is delicious. We are having it Sunday night with - wait for it.....roasted veggies! This batch will have green beans, portabella mushrooms (now I'm getting fancy - lol), carrots, russet potato, onion, broccoli and zucchini. It's a veggie lovers dream. I'll also make pasta as a side.

    CountryGirl10 - I usually just boil the chicken in water or cook it in the slow cooker with pepper and garlic powder & a little Italian dressing. The boiled version is so bland to me, though so I usually cook a big batch in the slow cooker. I use some for chicken salad. Let it cool before cutting in to pieces or it ends up shredded.

    He loved the lasagna. Had 3 pieces plus several pieces of bread :). Ended up having brownie ice cream sundaes for dessert. Plan on making a Gorton's salmon fillets, steamed cauliflower and baked potatoes tomorrow night. Leftover brownies for dessert.

    Countrygirl10, I like marinated, grilled boneless chicken breasts for chicken salad, as I prefer more of a Chinese chicken salad rather than the mayo kind. The marinade is soy sauce or tamari, garlic, sometimes fresh ginger, and EVOO. The salad varies depending on what I have, but ideally I include cooked rice, cooked broccoli, snow peas, radishes, scallions, sliced water chestnuts, sliced red pepper, and toasted sesame seeds. The dressing is similar to the marinade: tamari, EVOO, rice wine vinegar, fresh ginger and garlic, a bit of honey, and a good dose of sesame oil.

    Dinner last night was spaghetti & sausage with a Caesar side salad. Tonight will be Caesar salad with shrimp, with some bread if there is any in the freezer. I have a whole chicken defrosting for dinner tomorrow.
