    Faye - Thank you. Still not 100 percent but getting there.

    Dinner Saturday at the Parish was salad, rolls, roasted pork with gravy, roasted potatoes, and a veggie mixes (roasted I think). Cakes was served. I ended up eating mainly apps from the veggie tray, cheese tray, and fruit tray. Dinner tasted good but was too heavy for me. Tonight's dinner was IHOP on the drive home. I had a double BLT with a side of fruit and it was wonderful. I think I am finally getting an appetite back.

    We had London broil cooked in the crockpot served with rice, brown gravy and biscuits.

    Tonight's dinner will be somethi g I haven't made in a while. Salsa chicken. Rub the chicken with taco seasoning and pour salsa over it, pop it in the oven and serve with Spanish rice and beans.

    Tonight we are having London Broil that has been marinating in Italian dressing since last night. Sides of steamed broccoli, rice and crescent rolls.

    jdouglas13 - I would, too, but I have children who do not like their veggies in the sauce which is why they are often on the side. :-)

    And beef stew with biscuits sounds amazing.

    Last night we had beef stew with lots of veg -- mushrooms, carrots, green beans (thanks pup) and biscuit style dumplings. We had quite a bit left except for the dumplings, so we are having the leftover stew with biscuits tonight.

    Faye your menu sounds really good. Why have I not thought to saute spinach and mushrooms together? I know you are eating healthy, but I am not, so I would add the sautéed veg to the ravioli and sauce. ;)

    TJ84, would you mind sharing e recipe for the cornmeal dumplings or a link? Yum!

    Tonights dinner is whatever the parish church is offering the Knights and wife for dinner after Mass and a day of Meeting for the Knights. I can almost guarantee it will be better than hotel food. =^-.-^=

    TJ84 - I have never had cornmeal dumplings but they do sound good.

    I think we are having cheese ravioli in an alfredo sauce with sides of sauteed spinach and mushrooms and some garlic bread.

    Three-Bean Cassoulet with Cornmeal Dumplings. I got the recipe out of a Southern Living magazine. I made the soup yesterday, so all I'll have to do today is make the dumplings!
