I love it when I find great recipes that I'll continue to make over and over so I thought I'd also share the Chicken Quinoa Chili from tonight. It was SO good, and made a ton (I froze 1/2 of it).

I changed up the ingredients a bit (used kidney beans instead of black beans, a sprinkle of curry powder instead of cumin, and maybe 1/2 tsp. poultry seasoning instead of coriander... since these are what I had on hand). So simple and healthy (but you'd never know). I think tomorrow I'll serve the rest over roasted sweet potatoes. http://cheesewithnoodles.blogspot.com.au/2014/05/quinoa-chicken-chili.html

Last night we ended up having the leftover pizza and a side of Caesar salad. I'm really not in the mood for the leftover stew (haven't bought the mushrooms yet), so tonight will probably M&C, broccoli, and salad.

Those PB cookies sound really good. Raesmom, would you mind sharing the recipe?

Lol not this time Faye. I only make those for special occasions. This time we are using the betty crocker pouch of p.b cookies with added crushed walnuts and maybe a Hersey kiss on top.

Chili and/or soup sounds good. I think I will pull some chili out of the freezer for dinner. Perfect dinner for a cool wet day.
