Pasta Salad

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

    Tonight is a pork lion baked with sliced onions and apple sauce. Baked sweet potato as a side.

    jdouglas - almond slivers would be wonderful baked on top of the kugel! And wow - a 1/2 cup of cinnamon sugar definitely makes it a dessert! I often cut down the sugar and butter amt. and made it a side pasta dish instead of dessert.

    Thanks for the birthday wishes all! She picked Applebee's and she was very happy with her dinner. :-)

    Faye, happy birthday to you and youngest! I always feel like the Mom should be congratulated too. Those lemon bars sound wonderful. I hope the birthday girl had a great day!

    RFB, enjoy your Chinese! I know you will. Feet up, chilling, sounds wonderful. Glad the move went well and is behind you now. Noodle kugel is almost like a sweet version of baked ziti, except you use egg noodles, without tomato sauce or mozz. It has sour cream, cottage cheese, and eggs instead of ricotta. I probably put 1/2 cup of cinnamon sugar on top, although the recipe only calls for 1 T. I think next time I might add almonds some how -- maybe as part of the topping. Sort of like the toasted almond ice cream bars we used to be able to buy off the Good Humor trucks in the 1960's.

    Raesmom, I hope Rae enjoys her black sopa :) You should put your feet up too!

    So we ended up attending an outside tent service here in Raleigh after church this am in durham so I wasn't able to stop at food lion so I pulled some frozen ground beef from the freezer and am making Rae her "black sopa" a.k.a chili.

    Happy birthday to your baby girl Faye!!!

    RFB I will see if I can get a recipe from her. I must admit.....i had seconds, but realm if you think about it, one serving was mine the other belonged to NBS lol. Glad your move went well. I'll look onto that company when it comes time for us to finally make the move.

    Things are coming alone, boxes are being packed little by little. House is still a wreck but it will be a matter of time before it all looks good again.

    Faye- thank you! It went well... everything worked out perfectly, and then some. Wow!

    Raesmom- that chicken sounds so good! Would love a recipe, as it sounds so easy and healthy!

    Jdouglas- yum! I've never had fresh fruit on a kugel (come to think of it I'm not sure I've ever had a kugel, either!) And your burgers and asparagus sound great, too!

    And we're enjoying our second night of delicious Chinese food on paper plates... feet up... pure bliss :) The kitchen will be organized tomorrow lol!

    Tonight we are celebrating my youngest daughter's 14th birthday! She requested French toast for breakfast and she gets to pick the restaurant for dinner (well, within reason - Angus Barn is not on the approved list. lol). She is still deciding so dinner remains to be seen. She picked lemon bars as her "cake" and I made them this morning. Yum.....

    Jdouglas - your kugel sounds amazing!

    Raesmom - that is a very interesting combo of crock pot ingredients. Not sure I would have ever thought to put them together, but glad it was good. And you got some cheesecake. YAY!

    Last night we had a rather strange combination of things. Burgers on the grill, grilled asparagus (HT RC), tomato and basil salad. For dessert we had noodle kugel (pudding) with fresh Italian plums baked into it and topped with a huge amount of cinnamon sugar. It was beyond words delicious. The fresh plums really made it.

    Tonight, leftover kugel for dessert. The rest of dinner is up in the air, but I have a lot of veg to use, so maybe a frittata with corn, tomatoes, asparagus, bacon, and a salad on the side.

    So yesterday was girls night and my friend made a what she called a "crock pot creation" it was amazing!!! It was chicks great with spinach and carrots and a red marinara sauce over baked potatoes. I dreamt about it as well as the home made cheesecake that another friend made! I was in heaven!!!!!

    Today not sure what's for dinner yet. If I can get to a store on our way back from church I may pick up some ground beef and make mini meatloaves with mashed potatoes and mixed veggies.

    I just heard from Holly and she asked me to update you all. She and the new baby are doing well now. She had a very rough delivery (Sunday to Tuesday!). There were issues with the cord around the baby's neck and Holly ended up with an infection, as well. But, the baby is doing much better and so is Holly. I am sure they would appreciate your thoughts and prayers. Sending hugs, Holly!
