    Jdouglas - The Caesar salad dressing sounds awesome. Creamy Caesar is my favorite dressing.

    Anyone have a recipe for homemade Thousand Island dressing? That is DH favorite.

    It is so frustrating trying to do all the right things & trying to eat right and still not reach and maintain a certain goal because of all the hidden ingredients !!

    LOSLTP- here is a recipe from an awesome chef that doesn't use raw egg. It would be perfect for your vitamix. And congrats on your healthy accomplishments!

    Per Chef Boulud: For mayonnaise with no raw egg, poach an egg in vinegar water for 2-3 minutes. Take out and put into a blender. Add in 1 tablespoon mustard and 1 tablespoon red wine vinegar, and start to blend pouring in 1 cup peanut oil (I'll use canola, as I'm allergic to nuts). Add seasoning (salt and pepper) and... "you'll have the lightest mayonnaise you'll ever have."

    jdouglas - I take my own dressing to restaurants ! DH found this little silicone dressing bottle that fits in my purse- it has been perfect .
    He also found a great salad kit to take salads to work .It keeps the "wet" salad ingredients separate until time to eat but it all fits together in one unit !
    We want to make homemade mayo this week - in the vitamix that way I can cut back even more on my consumption of soy . Anyone got a GOOD mayo recipe ??
    We made peanut butter the other day for lunch - do you want to know the ingredients ?? PEANUTS - that was all !! No oil , no salt , no sweeteners just real peanuts and it is SO GOOD !
    I am not sorry we bought the Vitamix -coffee tastes so much better coming for fresh ground beans ( no way to put fillers like saw dust in a bag of coffee beans ) . The soups are so delicious ,fast and from fresh ingredients, anything with fruit - fresh with little to NO sugar . My daily blood sugar numbers have come down and my A1C came down at my last tes

    Now I want a salad lol. Tonight we are having chicken spaghetti with garlic bread on the side. Veggies are in the sauce and they include green peppers, onions and of course mushrooms :) Rae and I made turtle brownies for dessert.

    Losltp, I agree about the store-bought salad dressings. Too much sodium/salt/sugar for my taste. Most fresh ones are so easy and only take a couple of minutes to make. I like that I can put exactly what I want into them, too.

    RFB, here's my Caesar salad dressing. Sorry that my measurements are approximate. I make it by taste. I make it in a food processor, yield about 2 cups.

    Saute 2 smashed cloves of garlic (or 1 clove raw), add 1 can rinsed anchovies, process in FP till pureed. Add 1 raw egg, 1 tablespoon Dijon mustard, a shot or two of Worcestershire (optional), 1/2 - 3/4 cup of EVOO, and 1/2 cup of parmesan. Process again. Add juice of 1 fresh lemon and a lot of cracked black pepper. Process again. At this point, I add more lemon juice, parm, Dijon and/or EVOO (and process) until it tastes right to me. It should be thick, but not so thick that you can't pour it. It keeps about 2 days in the fridge.

    If the raw egg is of concern, I've read that you can sub mayo for the egg, but I have not tried that. Enjoy!

    LOSLTP- it's from Triple B Farm in Bullock, NC. I got it at the Wake Forrest Farmer's Market (so sad to be moving away from there!) I think it was $4.50/lb. for ground beef, but they have all their prices listed if you go (or you can call them).
