    We are having salad with veggies and turkey bacon, corn on the cob, cantaloupe and garlic bread tonight. The BOGO cantaloupe we got from Lowes Foods is delicious!

    ascherer - it's so nice that your mom was able to take a fun trip during such a difficult anniversary. She is lucky she has you to hold down the fort while she is away.

    We changed plans last night and ate with friends .
    So grilling tonight and making peach ice cream ! All welcome !!!
    JDOOUGLAS - The memorial will help you with "closure" even if you do not believe that now.
    Many I have attended turnout to be celebrations of life not mourning the loss of life
    My thoughts and prayers will be with you !!.

    We freeze bell peppers all the time! Especially when on sale at Aldi's! Just wash, core, chop in one inch squares and freeze in a baggy. Then just take out and add to a recipe as needed. I always have a bag of stop light peppers and green peppers in the freezer. Makes it so easy!

    Tonight's was a tomato and bacon sandwich. It was awesome. Sunday's dinner is going to be Cr*cker Barrel after my cousin and I pick up my Momma, Aunt Jerrie and Uncle Ted at the airport after their great adventure. I'm going to have to return to the real world on Monday and start feeding my DH again.

    JDouglas - Remember a Memorial service can be a time of laughter and memories or a time of tears. In a lot of ways you set the tone. If you are talking memories, laughter, the (now) funny stuff you got in trouble for, and yes even tears - you are changing the dynamic to a more positive one. Send me an email to let me know the date and I will be with you in spirit, thoughts, and prayers.

    I forgot (again) that this was the dinner thread. I think we are having (a) burgers on the grill, or
    (b) Caesar salad with shrimp, or (c) macaroni-tuna salad.

    Everyone's menus sound yummy! RFB, I'm drooling over how you are making the chicken. Losltp, I am absolutely crazy for homemade peach ice cream!! Enjoy! :) BTW, red peppers roasted on the grill and then skinned (put them in a covered bowl for about 10 minutes and the skins come right off) are really delicious and can be used in so many things. I love them in salad.

    Ascherer, I'm so glad you Mom was able to get away for some fun time. I haven't come to a death anniversary yet, but I can only imagine how difficult it will be. We are finally having my Mom's memorial service at the end of the month up at my Dad's. I can't say I'm looking forward to it.

    Ascherer- glad your mom is doing good. And how fun on the Alaska cruise! My DH was "forced" to go on one with his parents in his HS senior year, and he ended up adoring it (he thought it would be boring :-)

    For dinner tonight, I found a whole chicken at Target with a $3 off coupon, so I'm going to do the Pioneer Woman's roasted chicken recipe slathered in butter, lemon, and rosemary. Organic broccoli (from HT) and rice on the side.

    Reading this so early this am has me ready for dinner lol didn't pick up the ground beef on my HT run yesterday so dinner was creamy pork chops with rice and green beans.

    Tonight will be tacos for sure or pasta or in the mood for anything ground beef lol.

    LOSLTP - Thank you. My Momma is fine. She, Aunt Jerrie, and Uncle Ted come home Sunday from a two week trip that included a 7 day cruise in Alaska. I'm just in charge of keeping the cats and garden alive. The cats I can do. I have two of my own. =^-.-^= The garden is my problem (I don't have a green thumb) but I keep trying. This is year three of my trying to keep the garden alive. Year 1 Daddy was in the hospital in Charleston, SC. Year 2 was Daddy in the hospital in Garden City, SC and then he left us on June 28th. This is year 3. I'm just trying to keep it alive for Momma to get home from her trip (she needed something good around this time - especially this year). After two week I have only killed 3 tomato plants and 1 peace lily. I'm doing great this year. It is all good. You do what you can for family especially Momma.

    I think I know what kind of beans you are talking about but not the name .
    I hope you mother is OK !!
    Canning it not as hard as many think - I heard you can do it now with the new electric pressure cookers !
    I picked up some chicken yesterday to attempt canning giving me easy options for meals, salads, etc. - healthier than the cans from the store and cheaper too .
