Cheese Blintzes

 

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

As you can see in the photo, we had Cheese Blintzes with strawberries for breakfast this morning.  They are so easy to make using egg roll wrappers (found in the produce section of grocery store). I filled them with cottage cheese, sugar and cinnamon. Roll them up, cook in the skillet in some butter and top with light sour cream and strawberries.

    Tonight we had an eclectic meal including pasta with a cream sauce, scrambled eggs, biscuits, and clementines. Everyone had different requests for dinner tonight. I think I covered them all lol

    Jdouglas - ummmm....I'll have to get back to you on those blintzes. They did not last long enough to package up and send via pigeon carrier. :-) And the lobster sounds fabulous!!

    Tonight is spaghetti with sauce that I found in the freezer. It was the perfect portion for one. DH doesn't get back from our trip until tomorrow.

    Lol funny, I almost added some cinnamon and raisins to it lol, but it was very tasty! Thanks again for sharing the recipe.

    Raesmom - Yay, I'm glad you and Rae liked them! Now that I think about it, I suppose they really should be called roll-out oatmeal cookies instead of sugar cookies, but they came to mind when you asked, and I prefer that recipe over any other for cut-out-and-decorate cookies.

    DrD~your sugar cookies are amazing! Those oats really do something for it!! The first batch was in for 11 minutes and the edges were a bit crunchy so the second batch went in for 9.....PERFECTION!!!!! Rae decorated them with frosting and sprinkles of course.

    Tonights dinner will either be baked ziti or corn chowder and sugar cookies for dessert ;)

    Saturday DW and I treated ourselves to fresh lobster - yum! It's a rare splurge and we really enjoyed it. So far, the discussion of dinner for tonight has created an argument and a tantrum, but as yet no menu. Kind of wish DW and I could get out of here and go OUT for dinner to escape some of the drama. Ahhhh, family. ;)

    Family buffet - we have leftovers from Christmas ( turkey & roast beef , green beans, stuffing, roasted potatoes with the beef ) to that we are cooking fresh ribs, chicken breasts ,fixing potato salad ( from the leftover baked potatoes ) , corn pudding , anything else that appears to be missing lol.
    Most of the family will be staying the night - movies, games, snacks, etc . until we drop !

    Faye _ I LOVE the idea of the chocolate kisses in Raesmom's peanut butter cookies to make blossoms -we will probably make those in a day or two - I got several free packages of Hershey kisses at CVS week before last we have not used yet ( BOGO on the kisses , used coupons for $1 off per package then used EC bucks ! Also earned extra care bucks ! )
