    jdouglas13 - so glad to hear your folks are out of the hospital and your mom is in rehab. Keeping you all in my thoughts. :-)

    Change of plans on dessert. As good as the apple cobbler was, my youngest requested something with pumpkin so I just put a pumpkin cheesecake pie in the oven. I used 2 different recipes - 1 for the crust and 1 for the filling. My oldest does not like graham cr@ cker crust (and it isn't my favorite either) so I made a crust with 1 cup flour, 1/3 cup packed brown sugar and 5 tablespoons of butter pressed on the bottom. The filling it from this recipe:

    The only thing I changed (other than the whole crust - lol) is that I used 3/4 cup canned pumpkin instead of 1/2 cup. Looking forward to dessert tonight!

    Thanks Ascherer! Its been a bit of a battle for him. He is having some breathing problems now and has to use oxygen for a while...but he is a fighter. Thnx for the thoughts!!

    YAY Douglas!! Glad your dad is home and mom is better!! That is such great news :)

    I didn't want to mention the "E" word BC I didn't want to start anything, but I guess I'm too late lol

    Tonight will be left over baked ziti with some slow cooker apples Rae and I made yesterday which were amazing! (keep in mind I don't do apples)

    here is th recipe

    8 apples cored

    1/2 cup of oats

    1/2 cup raisins

    1/2 tablespoon butter (I grated my butter since it was not room temp)

    1 teaspoon cinnamon

    1/2 cup brown sugar

    3/4 cup of juice (I used old orchard wild cherry)

    Cut off tops of apples and core. Mix oats, raisins, butter, brown sugar and cinnamon in a separate bowl. Fill apples with mixture. Place in slow cooker side by side. Pour juice over apples. Cover and cook in slow cooker on low for 3 1/2 hours. I'm sure you can add some sort of a nut, didn't have any on hand. Topped with ice cream and "syrup" from the bottom of the slow cooker.

    House smelled like heaven lol. Hope someone tries it

    And yes, what a BEAUTIFUL day! We also enjoy some sweet potatoes for lunch!

    Twinredheads - great minds think a like. We are grilling steaks from the freezer with (I'm hoping) baked sweet potatoes, and steamed fresh green beans. I have to do a grocery store run for the sweet potatoes and green beans.

    Grilling because it is too beautiful not to! Steaks I found hiding in the freezer, biscuits, baked potatoes and green salad.

    Hey y'all :) the baked ziti epidemic actually began a few days ago. My sister and I finished it off last night. Tonight is shake and bake pork chops, acorn squash, and something green. My sister is cooking the pork chops since I can't make them to save my life.

    RFB, your brisket sounds wonderful!

    Thanks for everyone's good thoughts recently -- Dad is home from the hospital and Mom is now at the rehab center. Hopefully she'll be home soon too.

    Friday night was a football game so we just ended up having sandwiches. Last night we had Palermos veggie pizza since the kids were out and about with friends. Tonight it's Hebrew National 97% fat free beef hot dogs, macaroni salad (with tomatoes, black olives, green peppers, onions, light mayo and McCormick salad seasoning), broccoli florets, & apple cobbler for dessert.

    I actually made a mini version of the apple cobbler yesterday and it was devoured by the kids and their friends so I am making it again tonight so my husband actually gets to try it! It was delicious! lol

    Here's the cobbler recipe I am using:

    I am using dried cranberries instead of the cherries. And I am picking up some vanilla ice cream to top it with. :-)

    DH had to work late last night, so we just did leftovers. And tonight I'm making my beef brisket in beer with various roasted veggies and potatoes.
