    Friday night I made up my own recipe for Butternut Squash soup. I made some last winter but it was just too sweet for me so I made a lot of changes. This batch is so much better. It was made with the squash on sale at Aldi this week, the apples from this week, onions from last week, and potatoes from 3 weeks ago. Chicken broth was already in the pantry and cream cheese in the freezer. It made enough for at least 15 meals so half is in the freezer :)

    Tonight gonna throw some chicken drumsticks in the oven with some rice and veggies.

    We will be in buffalo next week to check on dad and take care of a few things. Mom requested corn chowder which is one of my fav's but DH hates it so I never make it. Mom deserves it and its the least I can do after she has been with dad from dawn til dusk at the hospital these past few weeks. So corn chowder and baked ziti for sure, maybe some taco soup and whatever else they request is what's for dinner next week.

    After a full week of homemade meals, I am serving toasted chicken salad sandwiches and homemade vegetable soup from the freezer. I have enough chicken to make chicken pot pie for tomorrow and the carcass is in the pot with celery, onion, carrot and bay leaf for homemade chicken broth that I will freeze. I got a lot out of the HT whole chicken ($0.89 lb) that I bought and served for dinner earlier in the week.

    Sunday night we are having the baked ravioli that was on the menu for last week but didn't end up happening. Serving it with garlic bead and a side salad.

    Tonight I'm using the French Lentils that are on sale (organic) for $2 at HT, and making a French Lentil and Bitter Green salad. And I think I'll have a sweet potato on the side. Also, for lunch I'm having one of those Earthbound Farm Spinach, Quinoa and Blueberry Salad Meals. I was so excited to see a free coupon for once come up on my FB feed for HT yesterday... keep an eye out!
