    RFB, yes tri-tips are horribly expensive here. I think we've only had it once since we've been here, and it wasn't that great. We used to get them all the time in CA. I still miss CA so much. Glad you found the jicama at HT. 14 coconuts? Wow!

    Dinner is going to be spaghetti and sausage tonight. We got out to the store today and HT finally had the sausage we like. Also went to Lowes and picked up a couple of bags of the 16/20 Argentinian shrimp for $7.99/lb.

    The final deal of the day was the Barilla Celentano (?) shaped pasta. I bought a case of 12 at Amazon after driving all over JoCo trying to find it somewhere other than the dreaded WM. Amazon had a 20% coupon and after a $5 GC, I got it for $1/box net.

    Jdouglas- I still get so frustrated at how expensive it is here, compared to back in CA (where it was one of the cheapest cuts!) But, out of 1 we usually get 3-4 meals, so it works out OK :-)

    Oh, and I found jicama at HT today... thanks for the tip, jdouglas! I was also excited to find those Melissa's young Thai coconuts there too (looks like we'll be needing 14 over the 4 weeks- yikes!) Luckily DH LOVES coconut!

    Happy birthday to your dad Faye!!! Enjoy the time and the meal together :-)

    Dinner tonight will be chili, that will last us thru dinner tomorrow as well and Tuesday will most likely be dinner on the road since we will be leaving that evening. Its either that or I'll pick up some breaded chicken breast today and pop them into the oven after I dip them in some of my homemade BBQ sauce and we will have chicken sandwiches.

    RFB, you know I love tri-tip! Sounds delicious as do your roasted potatoes. Have fun at your class this week.

    Tonight we're grilling up a tri-tip that my DH got at TJ, and I'm going to roast up some new potatoes with Dijon and thyme (a good tip to help cut back on oil is to toss veggies/potatoes that you want to roast with some Dijon to help keep moist... and it's delicious!) Then, I think I'm going to make some spring rolls with some purple cabbage and other various veggies that I have with a honey tahini dipping sauce.

    RFB - I agree with Ascherer - enjoy the class! And I am definitely looking forward to hearing about it.

    I had a veggie burger (since I had egg salad last night) and the other 2 had turkey burgers and one of the girls went to a party. Low key dinner after a long day.

    Sunday we are taking my dad out for his birthday! He picked Chinese food so I'll probably have shrimp, veggies and rice. Yum......
