    Tonight we're having baked pork chops topped with homemade dressing. The dressing is made from a torn loaf of the $1 (after Harris Teeter super double coupons a few weeks ago) Roman Meal bread, along with onions, garlic and previously-frozen celery sautéed in butter, pork chop broth / gravy, egg, salt, pepper and chopped sage and parsley from the garden. I browned the pork chops, placed them in a baking dish with gravy, and topped them with the homemade dressing, I'm baking this dish for 30 minutes at 350 degrees. We're also having sautéed squash and potatoes from the garden.

    Tonight I'm doing something new (to me)... spring rolls! I'm going to roast some eggplant and add in cabbage, carrots, leeks and some other veggies and do a tahini dipping sauce. And my DH is grilling some on sale corn and steak from HT today lol! :-)

    OK, you all get me craving pasta with your ziti-talk! So, I ended up making rigatoni with roasted green beans and Brussels sprouts, with a veggie broth, fresh thyme and lemon juice sauce. Then sprinkled with goat cheese (my favorite!) I've never roasted green beans before and they were FANTASTIC! My DH happily ate all of his veggie pasta (minus the goat cheese- he's crazy and doesn't like it) before he even had a bite of his leftover pork tenderloin :-)

    Raesmom and Faye - I am so glad to heard your Dads are doing better. That is awesome news.

    No clue what is for dinner tonight. We are at a Knights of Columbus function and a local church is feeding us dinner.

    Raesmom and Faye, I can't tell you both how glad I am to hear that your Dads are doing so well. Such wonderful news!

    Baked ziti, huh? Sounds awfully good! ;) Tonight is going to be white pizza, hopefully with a side salad. We are finally going grocery shopping today, and DW is going to faint when she sees how much produce is on the list! lol

    raesmom1612 - I am thrilled to hear the surgery went well and he is being released!! That is great news! My dad is feeling great and we are taking him out to Olive Garden for dinner. :-) After all this talk about baked ziti, it is going to be the first thing I make when we get home! lol

    This weekends dinner will be......Baked Ziti!!! Lol. I may do a cheesecake for dessert, still thinking about it. A friend is in town visiting for a few weeks and she hasn't met Rae yet so we are gonna try to go see her tonight

    Dad's surgery went really well. He needed some fluids after it was all said and done so he did have to stay overnight. He is being released this afternoon. Thanks to all of you for your thoughts, prayers and kind words :) This blog is awesome!!!
