    Mini turkey/quinoa meatloaves, broccoli and sweet potatoes.

    Tonight we're doing Herbed Butter Pork Chops, my Kiwi Apple Slaw and Corn Casserole (pork chops on sale from HT, Dean's French Onion Dip for the Corn Casserole at LF, and apples on huge markdown at HT yesterday).

    Also, just as a side note... I was part of a blogging group last year called Sunday Supper, and got to know a ton of awesome food bloggers. Now, any time I want to look for a recipe, I add in #SundaySupper after it in the search... for instance "pork chops #SundaySupper" (which is how I found the pork chop recipe above). Besides foodnetwork.com and epicurious.com these are some of the very best recipes out there (and there are a ton!)

    Also, if you haven't checked out Rachael Ray's magazine, it's gotten better and better each issue! I think I got it for $4.99/year though a special, and each issue is practically a cookbook on its own.

    RFB~ yes ma'am!! Its one of the many Puerto Rican dishes that I miss so much!! You can imagine the "feast" every time I go home lol. If I don't make it here I don't get to eat it until I go back home and since that's only twice a year.......a girl had to learn to do it herself (with a little help from my sister of course) Its fairly easy to make and the sweet and salty taste are AMAZING!! You should try it!!

    Raesmom- wow, did you make this? I've never tried one but it has always intrigued me :-) And yes, fun day... can hear kids playing and riding bikes, and playing basketball on the 2 streets around our home. It's nice! :-)

    jdouglas- what a FANTASTIC idea using the bacon fat for the oil! I'm playing around with two ideas, one sweet, and one something similar to what you mentioned with a few twists! I appreciate your input on this! You should submit a recipe, too... there are several great prizes (including first place of $3,000!) :-) I say go with the one below... it sounds delicious!     Tonight is a simple meal of turkey sandwiches, pasta salad and fruit.

    RFB, I keep thinking about the Simply Potatoes contest and the limit of 5 ingredients. If you can incorporate peppered bacon (Kunzler at HT), you've got the grease, salt and pepper covered. What about some kind of potato cakes made with shredded or mashed potatoes, the cooked bacon crumbled, some chopped asparagus, chopped red pepper, and an egg to hold it all together? You could cook it in the leftover bacon fat.

    Grilled mahi, 3 bean salad, roasted red potatoes, and grilled leeks and artichokes. The weather has been wonderful and we have enjoyed several picnics out in the backyard the last few days! Today will be no exception and after our picnic Mr. Nichols and the kids will build a fire so we can roast marshmallows. A date night with the family involving the movie Frozen will complete the night! Love springtime!!!!
