    Jdouglas....hope all is well with your fam, you've been in my thoughts all weekend :) I am not a "fryer" My hubby makes fun of me bc I NEVER buy oil and he uses it to make fish but we never have any lol. I bake EVERY single meat I make. I season the pork chops with adobo (Goya seasoning) rosemary and thyme. In a separate bowl I mix the can of mushroom soup with a bit of milk until its smooth and creamy. I pour it over the chops and in the oven they go for about 30 minutes on 350. Hubby uses the mushroom soup concoction as a gravy for his potatoes. I went the sausage gravy route tonight. Same directions as above (as far as cooking time and temp goes).     That would be sight, not site... sigh.

    Raesmom, I never thought to bake pork chops in the oven with mushroom soup. Do you brown them first? DW really likes pork chops, but I can't cook them to save my life. This sounds pretty easy though, even for me. Continuing to send good thoughts your way.

    My sister asked me to make spaghetti carbonara tonight which I usually make with asparagus in it. Apparently, Dad doesn't like asparagus to touch his carbonara, so it will be on the side. Mom probably won't be too happy because she's not eating pasta. It should be an interesting meal.

    Rumor has it tomorrow corned beef and cabbage is on the menu. While traditional for St. Patty's Day and my Dad's Irish roots, I personally can stand even the site of the stuff. I already told my sister she's on cooking duty tomorrow! LOL

    My poor DW will probably be on day 4 and 5 of ham and swiss on rye sandwiches or maybe a bowl of cereal with a side of Fritos. ;)

    Tonight will be pork chops in the oven with either a can of cream of mushroom soup or some sausage gravy. Served with homemade mashed potatoes, veggies, and biscuits.

    Getting my slow cooker ready, some sort of chicken soup since we are expecting more cold! When will it end??????????? lol

    jtlnsw - I agree with rfb -your chicken parm does sound delicious!

    RFB - I don't ever use a whole package of the taco seasoning mixes either. Too much spice for me as well.

    My beef stew is in the slow cooker now - will be a nice warm meal since it will be cold and yucky the rest of the day. Glad I got a walk in early before the rain started.

    Faye- great idea- I'll remember that for future enchiladas! And for tonight, I'm excited to try it, as sometimes the taco seasoning mixes are a bit too spicy for me, and I bet this will mellow it out. And yum on the beef stew!!

    Jtlnsw- your chicken parmesan sounds delicious! I need to put that on my menu this week :-)

    RFB - that sounds like a great addition to your taco meat. I often add a can of corn to our chicken mixture when I make enchiladas or quesadillas.

    It's beef stew for us tonight. Getting ready to throw it in the slow cooker now.

    I think I'll do chicken parmesan with spaghetti noodles. Haven't had that in a while.
