DH is going to grill some chicken tonight that I will make into chicken salad for lunches this week. Tonight's dinner will be a chef salad with some of the grilled chicken, cheese, cukes, tomatoes, boiled eggs, and any thing else I can find to throw in it. It is oh so nice to be back in NC for a while.

jdouglas13- your dinners from last night and tonight sound great!

Tonight we are having Pasta Primavera with rolls and cara cara orange slices on the side.

Last night we had baked cod (HT sale), oven fries, and broccoli (potatoes and broccoli on sale recently at Lowes). It was such an easy dinner with no clean up since the fish and potatoes were baked on no-stick foil lined half sheet pans. I spread mayo on the fish and topped that with garlic powder, lemon pepper, and a bread crumb-parm mixture. Really good and we enjoyed it since we have fish so rarely.

Tonight is steak on the grill (from a long-ago sale), garlic bread, and salad. I'm making roasted red peppers for the salad, and will also include grape tomatoes, green olives, radicchio, fennel, avocado, and gorgonzola. Hopefully all the veg is still good that I'm hoping to use, since I had wanted to use it this past week before DW's mouth trouble.

We're getting ready for the 'big' game tonight so it's going to be Red Baron pizza I picked up for $3.44 at Target and a tossed salad. Not sure about tomorrow. We're working the phones at UNC-TV and I'm not sure when we'll get home. It might be soup and sandwich.

Girls are at a sleepover so hubby and I are taking advantage and going to Firebird's. When we were there for my birthday last month, a server spilled water on my cashmere coat and though I was not bothered by it, they gave us $20 in gift cards :).
