    Tonight was sausage biscuits and hot dogs. Toppings included the bacon jam and it was great. Cannot wait to try it on burgers.

    Scoutmomof2- thank you so much for sharing the recipe! It looks like perfection in a jar, and I'm with her... I would love some on toast with a runny egg- yum! Or even on roast chicken, or mixed in veggies to flavor them up :-) Can't wait to try it.

    Raleighfoodblogger. Here is the recipe I used. I did add cayenne pepper in place of the black pepper but pretty much followed the rest. http://tastykitchen.com/blog/2012/07/bacon-jam-ooh-mommy/

    I did 1/2 a recipe which made two 8 oz jars. Next time I will probably do the full recipe.

    I am not sure what we are having tonight but I am thinking about making some bruschetta (from those diced tomatoes I got on sale awhile back) and maybe some olive tapenade (from all those Marios olives in the pantry). Pick up the french bread at HT that is one of my vic specials. Use that with those toppings and the bacon jam, plus maybe some buffalo chicken dip or even some hot corn dip (with tortillas) and just do heavy hors d'oeuvres.

    The bacon jam was incredible. It was good on the spoon last night and really good spread on my egg sandwich this morning. It has coffee, maple syrup, brown sugar, cider vinegar, onions and garlic in it. Lots of flavor. Kind of sweet but savory at the same time. I can see adding it to muffins, was thinking about putting on mayonaisse chicken under the mayo. Also on crostini or toasted french bread (maybe with a little cheese). Or even spread on pillsbury croissants, sprinkled with cheese and then baked. I heard it is good on a peanut butter sandwich too.

    scoutmomof2- that bacon jam sounds delicious... as I love anything with bacon :-) Let us know how it turns out!

    And speaking of pot roast, my DH told me last night that he wants a good old fashioned pot roast today while he watches the game (I'll be in the other room watching Food Network lol!)

    And jdouglas- the radicchio was fantastic!! But I'll have to say the tilapia stole the show... so glad I can now eat fish!!

    We had burgers tonight but I am making Bacon Jam right now. You can spread it on toast, put it on eggs or in omelets, on burgers, hot dogs and all kinds of stuff. Never had it and never made it, saw it on a tv show and had to find a recipe and try it. It is simmering now and smells wonderful!

    Tonight, DH made stir fry. He used frozen shrimp (B1G1), cans of stuff he found in the cabinet (on sale at some point) and then made his own sauce. I need to remember to get him in the kitchen more often even if I do have to repair/reclean it afterwords. ;-)
