    We are eating up the last of the Brunswick stew made for our traditional Christmas eve dinner plus chicken noodles w/mushrooms that was in the freezer. I also used all of the bbq beef brisket hubby made on the Big Green Egg for New Year's in the crock pot for beef-veggie stew/soup to eat on tomorrow and beyond.

    Beef stew always has tomatoes in it at my house - sometimes addition juice if I have any.
    Like gatorgirl I throw in small portion of green peas. a small amount of whole kernel corn is good and adds color . I have had stew with zucchini and/or yellow squash added very late in the cooking process so they do not get mushy . It was very good- tasted like summer . Use very small, fresh yellow squash and chop them small to hide from picky eaters.

    Tonight we are eating out with some friends. Tomorrow night, Chicken Parmesan over fettuccine, steamed broccoli and whole wheat bread (mix on sale at HT a few weeks back) for dessert brownie sundaes

    Jdouglas - I made beef stew this week and the vegs vary depending on what I have on hand. My usual are carrots, celery, onions, potatoes, and I throw in some frozen green peas at the end. I sometimes through in a can of diced tomatoes. This week I used the little frozen pearl onions and I had these tiny, baby round white potatoes that I washed and threw in whole without peeling. I also put in some Worcestershire sauce and catsup (I didn't have tomatoes) to the beef stock. It was delicious.

    Nanee Lion - My back is definitely starting to feel better although it is not yet healed. Thanks for asking. :-) I am glad your back is also a little better. How is your lung infection?

    I went to HT for the first time this week today. The 401/1010 store was pretty well stocked I thought. Will go to a Cary store tomorrow when I am there for a class my daughter takes.

    jdouglas, I use lots and lots of mushrooms, onions, carrots, and sometimes potatoes and that's it for veggies.

    jdouglas- 2 of my other favorites are leeks and parsnips (oh, how I ADORE parsnips!) I've heard of using turnips, but have never tried... need to this year! Also, you could add some spinach at the end to add an interesting texture, bright color and nutrition as well. :-)

    Leftover clam chowder pot roast tonight, which was actually quite good after I rescued it. Not much meat left, so it will probably look more like beef stew with lots of veg. I might make biscuits so DW doesn't mind the veg so much ;)

    What veg does everyone put in their stew? I usually use white potatoes (so they don't disintegrate), mushrooms, carrots, onions, and green beans, but would love some new ideas.

    Faye, how is your back doing? Have you been to HT? I have still not been able to go but back is some better.
