    I'll post the Christmas menu thread Monday morning with the weekly meals, jdouglas.

    Tonight is chicken enchilada night - really it is.

    We did not have the chicken enchiladas last night because at the last minute both girls were invited to sleep over at friends houses. That meant no kids. which means DATE NIGHT! Hubby and I went for sushi and then finished up the Christmas shopping for his mom and bought him a few shirts as well.

    Turkey quinoa mini meatloaves, broccoli and baked potatoes. The turkey was on markdown at Kroger, broccoli always an excellent price at Aldi's and potatoes from Aldi's as well.

    Faye, it sounds like pear is the new watermelon! ;)

    RFB, I love one pot meals and casseroles. I used to cut out recipes for them when I was a kid for my Mom. LOL

    Well, last night's sides ended up being roasted sweet potatoes and roasted Brussels sprouts AND DW ate the Brussels sprouts! Good thing, we have lots more.

    Tonight, so far at least, the plan is stuffed yellow peppers filled with spinach, rice, roasted grape tomatoes, garlic, and sautéed prosciutto. Plan B is mac & cheese, steamed broccoli. Big surprise.

    Faye, can you please post a thread asking what everyones' menus are for Christmas? I think I know what I'm making, but I'm still open to ideas.

    jdouglas- we're going easy tonight too! White Turkey Cilantro Chili w/ground turkey from last week HT sale, and white beans on sale today. Had the rest on hand. Nice one-pot meal :-)

    I think it's chicken enchiladas, rice and salad here with ...you guessed it....pear slices!!

    Steak on the grill (prior sale at HT), green salad with gorgonzola from TJ, baked potatoes. Easy and very little cleanup.
