Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas for what to make with all the great deals you have bought on sale recently.

    Thanks, ThomasG! :) Homemade mac & cheese is definitely one of my favorites. No one even missed the hot dogs tonight! hahahaha ;)

    You can never go wrong with Mac & Cheese - especially homemade! ( we had to give up the blue box kind years ago due to sodium content )
    Your salad does sound Great - filing that one in my "try file" !
    I love "garbage" meals ( salads , soups , casseroles with everything you can throw in it )

    Tonight, my carnivore family is going to get treated to pasta, my fave! LOL ;)

    Baked mac & cheese - Dad's request because he thinks it's raw if I only top brown it - and steamed broccoli. They will be asking where the hot dogs are, which they like to put in M&C, but no hot dogs tonight! :)

    ThomasG, I did not know pineapple has protein! I love it fresh or grilled too. I also hear you about the old age thing! ;) LOL

    RFB, no real recipe. I just made it up as I went along one day. Grilled chicken, cooked rice, raw pineapple, snow peas and green onions, slice water chestnuts in the can - rinse well. Sometimes I add grilled asparagus. Dressing: basic vinaigrette proportions to your taste of rice wine vinegar and EVOO. Add in 1 t. - 1 T. each fresh minced garlic and ginger, a few tablespoons of honey melted in the microwave, and start with a couple tablespoons of tamari. Add sesame oil to taste. Shake very well, and let flavors combine for a bit before using. If you want to change it up a bit, add a couple tablespoons of melted frozen OJ concentrate. I like to use the Ziploc screw-top 2-cup containers for dressing and for storing frozen OJ concentrate since I only use if for dressing. They make it so easy. No leaking and no mess, and they go right in the fridge or freezer and

    Thanks for the tips about the pineapple - I will try the sauce idea for pancakes( would be good on angel food cake too (?) and will play with the moisture issue too..
    i LOVE fresh pineappple grilled with veggies - mushrooms,. zucchini , yellow squash , peppers & onions - chicken, shrimp & maybe a little beef is nice with all teh other but not neccessary . Did you know pineapple has protein ??

    ThomasG, baking may be a little bit tricky with raw, fresh pineapple, because it has so much water in it. That said, I think you could probably make a delicious pineapple sauce to put ON pancakes. As far as the pineapple upside down cake, I think if you sauteed fresh pineapple slices in a bit of butter (core removed) until tender and the excess liquid has cooked out, you should be okay. You may want to blot them a bit before you put them in the cake pan. Also, make sure the cake pan is well greased.

    I make an Asian-inspired salad with chicken, rice, fresh pineapple, green onions, snow peas, water chestnuts, and a vinaigrette dressing made with rice wine vinegar, oil, fresh ginger, fresh garlic, honey, sesame oil, and low-sodium tamari (soy sauce can sub). We really enjoy it.
