Great sounding dinners from everyone tonight!

We are having leftover chicken enchiladas that I put in the freezer early last week. Sides of rice and salad.

raesmom- ribs sound good too! And yes, it's so simple and delicious, I've been making it for years (from the old Somersizing diet- which I still try to eat by!) Here it is, hope you enjoy-

Cabbage Lasagna- 1 lb. ground beef, 4 c. chopped cabbage, 1/2 tsp. each dried rosemary, thyme, oregano, basil, 1 onion chopped, salt and pepper to taste, 1 c. spaghetti sauce, 1/2 c. beef broth, 1-1/2 c. shredded mozzarella cheese, parmesan cheese grated on top.

Brown ground beef w/seasonings, and drain fat. In large bowl mix cabbage, onion, salt and pepper to taste, and spaghetti sauce. Then add the cooked beef mixture and stir (mixture should not be soupy). Spoon into greased 9x13 pan and pour beef broth over. Bake at 350 covered, for 1 hour. Remove from oven and stir. Replace cover and bake another 25 minutes. Then one more time, remove from oven, add both cheeses and bake uncovered for a few more minutes to melt cheeses.

Cabbage lasagna RFB??? I LOVE cabbage and I LOVE any kind of pasta!! I'm coming over for dinner lol. So you use the cabbage in place of lasagna noodles? No idea what's for dinner tonight....maybe some bbq ribs in the oven, homemade potato salad, some greens and Pillsbury biscuits on the side. Possibly some peanut butter cookies for dessert.

We're doing Cabbage Lasagna tonight w/ground beef from Fresh Market sale, cabbage, onion, pasta sauce and mozzarella cheese from HT sale. And a grilled Caesar Salad (using romaine from Target $1 off produce) with bacon from FL sale. (P.S. I've been dying to get another grill pan and I was able to use a 20% off cartwheel at Target a few days ago- good for any of Giada's cookware).

Taco bar sounds fun, twinreadheads! Enjoy... especially the lettuce from the garden! :)

Taco bar! Great deal on 93% lean meat on clearance at Lowes a month ago, cheap shredded cheese from HT, lettuce and onions from the garden.

That sounds yummy, RFB. Congrats on your brisket find!

Tonight will probably be spaghetti and meatballs. Six lbs of my 10 lbs ground chuck purchase went into burger patties. With the other 4 lbs, I made Italian style meatballs yesterday. I bake them in the oven, drizzled with a little EVOO and sprinkled with extra garlic powder, on foil-lined half sheet pans for good browning and easy cleanup.

They are great to have on hand for a quick, easy dinner.

Beef Brisket in Beer (one of my VERY favorite dishes!)- Brisket on clearance today at FL- yay! Onion on sale, chili sauce and brown sugar in pantry, beer left in fridge (we're not beer drinkers, so only use in recipes :-) And a side of roasted asparagus (Kroger sale) with parmesan (HT past 20% off specialty cheese sale). Might make rice for DH (free from past HT sale) but I'm going low carb.
