    Sunnyside, I agree about the mess created by making gnocchi, so when I make it, I make a lot!

    Tonight is a Chinese chicken and broccoli stir fry with a sweet-spicy sauce and rice on the side.

    Tonight it's Johnsonville turkey sausages on the grill (from HT BOGO and coupon deal a couple months ago), tomato and cucumber salad (fresh tomatoes from garden and cukes from farmers market), and sauteed mushrooms, onions and squash.

    yesterday Smithfield teriyaki pork tenderloin, last weeks evic 4.97, with loaded mashed potatoes, and corn.

    today slow cooker bbq pulled chicken sandwiches with b2g3 chicken, bbq sauce, Italian dressing,and brown sugar. On some rolls from FL.

    Gorton's salmon(last box from HT a while back), cabbage, baked potatoes, fruit. Trying to use up what I have to get ready for SD!

    Faye, the eggplant lasagna turned out great! I sautéed the eggplant slices in the same skillet I used to sautee onions, garlic and bell peppers for the lasagna, so it was very flavorful. I used approximately 1 1/2 jars of spaghetti sauce. I didn't have ricotta cheese so I used a block of cream cheese I previously purchased on sale at Lowe's Food during their Kraft promotion, and I blended it with egg, parmesan and mozzarella cheese. I placed the eggplant slices as I would typically layer lasagna pasta . By the way, an eggplant cooking tip I've learned recently: After first slicing the eggplant, I salted the slices and let them sit for about an hour to "sweat" out the typical bitterness. I then washed off them off before sautéing them.

    Gator Girll - that sounds really good! I have a turkey breast in the freezer that I need to cook so that may be next week with gravy and green beans.

    Aldi 1.89 chix breast marinated with .99 c bottle of "herb & garlic" marinade grilled to perfection by hubby, along with .49c per lb baked potatoes and corn. Yum.

    I'm preparing lasagna using sauce and cheese I previously purchased on sale at Harris Teeter, as well as cooked eggplant slices in place of pasta. I'm out of lasagna pasta and I recently heard eggplant can be used in place of pasta in lasagna dishes. I have an eggplant (from a local produce delivery service subscription) so I'll give it a try.

    Fixing some pizza out of the freezer tonight ------- so we can make room for more during Super Doubles at Harris Teeter next week :) Son and grandsons down for the week, last night it was sweet & sour chicken, veggies & rice -
