    Tonight it's just me again (my husband is out-of-town), I will having a turkey sub, so I don't have to cook just for myself.

    Tonight I think we are having Parkers BBQ from the famous Wilson restaurant. I'll be in Wilson this afternoon with my dad and the girls visiting the cemetary where my mom and many relatives are buried. Just about any trip to Wilson involves a stop at Parkers if my dad has anything to say about it! So it looks like BBQ chicken, Brunswick stew, cole slaw and hush puppies for dinner.

    OMG FAYE they look so yummy!!!!!!! We are having friends over tonight and they requested beef and cheese pastelillos and I also made 9 can taco soup. Maybe some chocolate chip cookies in the oven (Pillsbury of course)

    Homemade milk chocolate chip meringues just came out of the oven and they are delicious! My 13 year has been asking for them for a week so today we made them together. I posted a picture of them above. Here's the link to the recipe:

    My hubby wanted to cook a pork but/ on the grill, so it is cooking as I write. Not a fabulous deal, but it will make several meals. Pulled pork sandwiches tonight with homemade coleslaw. He will chop half and freeze it for more sandwiches next weekend.

    Enjoy the fish & chips tonight! Sounds yummy!

    Hmmm...recipe. Let's see. I will probably throw together in a bowl the shredded cooked chicken, sauteed chopped portabella mushrooms, fresh garlic and onions (mushrooms marked down at LF yesterday), brown rice, shredded cheddar or 4 cheese Mexican cheese, light sour cream, a little salsa and 1/3 can of enchilada sauce (HT store brand that was on sale a while ago).

    Season it with some additional crushed red pepper, chili powder and oregano leaves.

    Roll up the chicken mixture in flour tortillas (they were $1 at HT last week) and put in 9 x 13" pan.

    Pour remaining enchilada sauce on top of rolled up tortillas and top with more shredded cheese. Bake in 350 oven for about 30 minutes until cheese is bubbly.

    Honestly, it's a pretty loose recipe. I make it a little differently every time depending on what I have in the house, but this is how I am making it tonight.

    Recipe, please :) I particularly need details on the sauce you put on top before you bake it. I love cheese enchiladas, but am not a fan of spicy, so have never tried to make them.

    Last night we got rid of, I mean served, the rest of the chicken thighs to those who would eat them, and made some mac & cheese and steamed broccoli for sides. I skipped the chicken. Thankfully it's now gone.

    Tonight my Dad was talking about maybe getting fish & chips from this place here that rivals the fish & chips place on 55 in Apex (Skippy's?). It's a rare treat for me, so I'm looking forward to it.
