What's for dinner Monday and weekly meal plan

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

Here is our menu for the week:

Meatless Monday: Southwest tortilla roll-ups with scrambled eggs, Boca veggie sausage, cheese, onions green peppers and salsa. Sides of Mahatma saffron rice and sauteed zucchini and onion, and local strawberries.  (Eggs were .99/dozen with Walgreens raincheck, Boca sausage on sale at HT super doubles, Mahatma rice free at HT with coupon from Sunday paper, zucchini on sale .99/lb at Kroger, strawberries from local farm)

Tuesday: Chicken salad on honey wheat bread, cole slaw, pear slices (chicken bought on sale for $1.99/lb and cooked in slow cooker with a little Italian dressing, pears were .99/lb at Kroger)

Wednesday:  Linguini with vodka sauce, garlic bread, salad (free Mueller's pot sized linguini, sauce on sale weeks ago)

Thursday:  Teriyaki shrimp, rice, broccoli and mushrooms

Friday:  Philly cheesesteak subs, baked sweet potatoes, fruit

    RFB and Ascherer - Nakabi lives in another state now. I'm not sure you want to drive that far to deliver the meals. :-)

    Nakabi, How exciting. Praying for a short labor; a happy, healthy baby and Momma. I am grinning ear to ear I am so tickled. I needed some good news today and you delivered (so to speak). Keep us posted when you can. Make sure to let us know what coupons we need to start collecting for you. Let me know if I can bring dinner one night. You rock it Sweet Lady!!!!

    jdouglas- yes, capers are a good treat!!! And with the recipe, the fontina sounds great. Maybe even some brie? Pretty much any cheese would work well, just make sure to toothpick it tight so it won't run out :-)

    Nakabi- how exciting, sending lots of hugs and well wishes your way. If you need anything, feel free to e-mail... would love to bring you some non-hospital food!

    Raesmom, sadly, the potato cakes won't work in the oven. :(

    However, you have an open invitation for you and Rae to come over any time for a frying lesson if you can handle the antics of the naughty twins. Seriously!

    Thanks, RFB. HT had a jar of pretty nice looking capers yesterday at a good price that I treated myself to with Chicken Piccata in mind. I may be trying a slightly altered version of your Chicken Sophie this week as I have asparagus, prosciutto, and chicken in the house. I'm not a fan of goat cheese, but thought I might sub something else for it. Do you have a suggestion? I was considering Italian fontina.

    Raesmom- I thought it was the 27th today..happy belated birthday! !
    We are on our way to the induction for ESPN so hospital food is on the menu tonight..thankfully Mr. Nichols has offered to go get Thai food if the food is bad LOL
