Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

Here is our menu for this week:

Meatless Monday

At the request of my youngest (and because it is a very busy night), we are having veggie pizza tonight as well as a green salad with avocados, grape tomatoes, cucumbers, onions, black olives and seasoned croutons with a romano parrmesan vinaigrette

Tuesday

Boneless eye of round, Mahatma saffron rice, homemade vegetable soup, wheat rolls

Wednesday

Shrimp tacos using the kiwi/apple slaw recipe from Diana in the Spoonful of Luxe post above, corn, Spanish rice (kiwi on sale for .25 each through 1/28)

Thursday

BBQ chicken sliders using Buy 2 Get 1 Free chicken from HT from a couple weeks ago cooked in the slow cooker with honey BBQ sauce and a side of zucchini fritters using the recipe HERE.

Friday

Teriyaki sesame tofu with stir fry veggies and rice

    Jdouglas- whats the secret to split pea soup? Growing up back home we didnt eat it so im not familiar with making it. I love reading peoples menus and how diverse all our cooking styles are. I took out some boneless skinless chicken for tomorrow s meal..Fiona (my 2 year old) has requested lettuce wraps and how could I say no even though stuffed peppers were on the menu instead? Lol

    WFR, we call that appetizers for dinner. :)

    Tonight will be leftover split pea-ham soup with a few more carrots thrown in and grilled cheese sandwiches. If I can get the pizza dough done today, we may have pizza tomorrow for dinner. Faye, you inspired me ;) Plan B will be spaghetti carbonara (pasta with crumbled bacon, eggs, parmesan cheese, garlic) with some roasted asparagus from the freezer thrown in. I love carbonara, and it is a really easy, frugal, and fast dish to make that is made from stuff many of us usually already have on hand. It hides all kinds of veggies really well, too.

    Nakabi- that is so cute- you have great kids! And your lasagna sounds awesome.

    We have some pork tenderloin left over, so I'm going to do pork tonkatsu sliders, using some Asian seasonings mixed in with panko bread crumbs (used the Kikkoman Q at HT) to fry them. DH is picking up some rolls/buns on the way home... I told him I don't care what kind, as long as they are on sale :-)

    Ok, now I'm mad. I just discovered the new website design deletes your whole comment if you go above 1000 characters. No chance to edit anything, it just all disappears upon the next click of the keyboard. Very frustrating because my comment included two recipes. Grrrrrrrrrrr :(

    We will be having white beans and rice seasoned with a ham bone and cornbread. Salad on the side.

    I know what you mean, Nakabi. We eat meatless multiple times a week and my kids are generally good about eating the veggies I serve (especially when I hide them in things like pizza, lasagna and zucchini/carrot fritters! lol).

    Faye-it is!! I try to do a couple nights a week that are meatless (usually one of them on the weekend) and this is one of my husband's favourite. I'm thankful for a husband and children that eat every vegetable I put in front of them and enjoy them!

    We're going out of town tomorrow for the rest of the week so I've been cleaning out the fridge. The last thing I've got is leftover sausage and spinach soup that I will serve with cheese toasts.

    Wildfrenchrose - I love cottage cheese with peaches as well. I often have that for breakfast. My husband says "ewwww".
