RAESMOM1612- If you want corn chowder - make it for you & "baby smith " .
Right now "mommy-to-be" and "baby-to-be" RULE ! LOL
The potato bacon soup sounds SO GOOD !
I may do a search for a recipe or two and try again ....

Losltp-any kind of soup with potatoes in it is my fav lol I've been thinking about making myself some corn chowder but DH doesn't like it :/ While mom was in the ER we would go downstairs to Tim Hortons and they had a potato bacon soup......lets just say by the time I left everyone was hooked on that soup lol. If you ever make your moms recipe.....save me a bowl :)

Thanks for all of your suggestions. One thing I noticed is that many of you mentioned juice. That is something we just don't have at the house. Neither of us drink it. Thanks again.

Losltp, that story is so sweet about your Mom making the potato soup. Thanks for sharing it. :)

ASCHERER ( & others who may want to know ) - CORRECTION : most regular sized biscuits count as 2 servings of carbs ( 3 max per meal ) , with juice and hash browns - you are to 4 without totally the contents of the wrap/biscuit/muffin !
The wraps sound good for something a little different - I will give those a try for me .
DH may be hard to convince .

jdouglas - the vichyssoise sounds perfect on this hot evening ! I got eggs today for the egg salad tomorrow
My mother's "cure all " was potato soup - when one of us felt bad she would head to the garden , poke around in the dirt for the potatoes, bring them to the house , wash and cook them into the magically soup .sometimes we faked it to get the soup ( daddy did too ) .

Ascherer, what is the outer wrap on McDonald's wrap that your DH usually gets? I know breakfast was always a difficult meal for my Mom with diabetes. She usually had an egg and yogurt, but stand-alone eggs aren't an easy on-the-run food. I like the omelet in the muffin tin idea, and it would be even more portable with a muffin cup liner.

Tonight is going to be vichyssoise from the freezer and a salad. We had the BLT-egg salad sandwiches last night -- a bit messy, but really good!

STASAN1 - thanks fro the pork chop idea ! I am going to try them when cool enough to use the oven again !
Tonight the promised pizzas for the bean pickers - cooking them on grill outside with side of salad and CHILLED watermelon .

ASCHERER - THANK OYU for the chicken breast deal at KROGER ! I was hoping they were in the 25% off sale - I am getting some tomorrow with senior discount !
As for breakfast ideas - I roll out a biscuit flat and make it into a wrap/roll-up- then bake -fill with favorites - it works great "on the go " I cut it in half for little hands.
DO watch the carbs - even too many veggies can be too much on the blood sugar first thing in the morning . I have a small high protein breakfast then a mid-morning snack ( fruit, nuts maybe cheese or a SMALL smoothie ) if I am up early - keeps my numbers steady .

Just came back from CA. visiting my son and family in the military. Anyway, my son made pepper jelly from his garden peppers and he took pork chops, salt and peppered them, then topped with pepper jelly and baked at 425 for 30 minutes. OMG they were good. Making these with a side of fresh green beans and rice pilaf.
