    I went with the crowd tonight and did grilled chicken breasts over a mix salad.
    Any guess what was for dessert ?? strawberries !
    I make a smoothie today with cucumber,baby spinach , strawberries , pineapple ( $2 at Walmart ) and a few slices of banana .

    This computer I'm using is making me crazy. I'm not sure if it's doing weird stuff on its own, or if my Mom is helping. ;)

    Dinner tonight is breaded chicken cutlets, boxed scalloped potatoes, and broccoli. I'm hoping Dad will eat more than just soup tonight. Thanks for all the good thoughts. He's doing better.

    Tomorrow my sister is heading to her daughter's graduation, so it'll just be me, Dad, and their very very old and sweet retired racing Greyhound, Fingers crossed that my not-so-great caretaking skills keep everyone going until she gets back!

    Losltp, when I make cod, I smear the top of it with mayo (sometimes mayo and mustard), lots of garlic powder, and then coat it in bread crumbs. Put it on a parchment lined sheet for easy clean up, and bake at 425 until done.

    Chicken here as well. We ended up having leftovers last night so i put the chicken breasts in the slow cooker at 1 pm with some herb & garlic marinade and spices. I'll shred it when done and serve it on Chicago rolls (marked down at HT this morning) with tomato, onions and provolone. I may just broil them for a few minutes in the oven to melt the cheese. Sides of cole slaw and sugar snap peas.

    If we have leftover chicken, I'll probably make chicken salad with it after your posts, RFB and garnertoy. Thanks for the idea. :-)

    We're doing chicken, too! I think we're going to do a big chicken salad with hardboiled eggs and bacon with a maple Dijon dressing (using the .49 earthbound farm organic lettuce from HT).

    Glad to hear your dad 's illness was caught so early and he is home already !
    I would love the fish - I have some cod and a new fish ,Porgie , to try soon .
    Any suggestions ??
    We went with the sorbet last night ( then DH made popcorn ) -
    I got a LARGE basket of berries Thursday .
    I still have half the berries ! - Now thinking of what to do with them . Since the muffins are a hit wondering about baking more and freezing them I will probably make more jam ( We "bought" a jam/jelly maker last month - it only takes 20 minutes to make a batch -the instructions are very simple and no standing over stove stirring for hours ; It is a small batch - only 4 jars but very quick . BALL makes the machine - ordered it from Amazon ( free with swagbucks gift card and earned swagbucks - how easy is that ??

    Losltp, I just had to say your supper from Sunday sounded absolutely wonderful as does your homemade jam!! :) Did you make the sorbet/ice cream? Obviously you had a lot of strawberries!
