    Faye - lol, sounds like you are well stocked for the Icepocolypse!

    Your soup sounds good. I think that's what we're having too. I have some cooked shredded chicken I pulled out of the freezer, so it's just a matter of chicken-what soup. Kim's soup sounds really good (just with some chicken in it), but I'm also thinking about chicken noodle. I found a package of Manischewitz extra fine egg noodles in the pantry. Love those in soup!

    Tonight we are having the rest of the Veggie Soup I made Friday with pasta in it. Sides of cornbread (thanks for the idea, Kim!) and strawberries. My oldest just put some brownies in the oven so that will be dessert.

    Pcb Douglas - I picked up some of the HT sliced cheese this morning. Very good deal! I also bought 2 gallons of milk, 2 pack of the 18-count eggs, Raisin Bran and more. lol I usually do my weekly HT shop on Monday mornings after the fox50 segment and it was PACKED this morning. People were stock up for Icepocolypse II. I was just in there doing my regular shopping but with all the milk and eggs, I am sure I looked like a worked up mom stocking up for the Ice Age. :-)

    Correction: Mine is actually called Chicken Taco Casserole (but same difference really!) You can find the recipe here:

    @Faye: This calls for crushed tortilla chips that you put in between layers and then also on top. I have found that this is great out of the oven, but gets mushy for reheating. Tonight I am going to use low carb tortillas cut into strips for the middle part and garnish with the crushed chips on top and see how that works out.

    @PCB - thank you! It is a reminder to me everyday that if I have nothing else, I can choose to have hope. :-)

    Hope, first I have to say I really love your blog name! Your casserole sounds yummy.

    HT has their block cheese on sale this week 3/$5, so that ties in great for any time of cozy, winter, casserole involving cheese. Clayton was pretty close to being cleared out yesterday, so remember to get rainchecks.

    Tonight's dinner is still a mystery as I slept in this morning and am still working on coffee. I was supposed to take DW out to lunch for fish & chips yesterday for Valentines, but didn't get out, so last night we had baked cod with steak fries and roasted asparagus.

    Now a note to my blog friends here: please make yourself a dummy FB account and come back and start posting. I really miss everyone!! We had such a great community here, and Faye has put too much work and heart into this blog to let it die because of a ridiculous FB login requirement.

    Ok, jumping off the soapbox. ;)

    Kim - your pasta e fajoli soup sounds wonderful! Thank you for sharing the recipe! It is perfect for this wintry weather we are having.

    Hope lives, your chicken tortilla casserole also sounds great! Do you use flour or corn tortillas?

    Pasta E Fajioli Soup (compliments of N&O)

    1 T. olive oil
    1 small onion, diced
    2 ribs celery, diced
    1 carrot, diced
    1 can (14 oz) vegetable broth
    2 c. water 1 can cannelini beans, rinsed & drained 1 can (14 oz) diced tomatoes 2 garlic cloves, minced 1 t. sugar 1/4 t. salt 1/4 t. black pepper 1/3 c. ditalini pasta 1 pkg. (10 oz) frozen chopped spinach

    Saute onion, celery, garlic, & carrot in olive oil until tender. Add broth & water & bring to boil. Add beans, tomatoes, sugar, salt, and pepper & bring to boil. Add pasta and cook 5 min. Add spinach and cook additional 4 min. Serve sprinkled with parmesan cheese. ENJOY!

    I serve this delicious vegetarian soup with cornbread.
