Veggie soup

 

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

This week, our meal plan includes:

Monday: Soup and Sandwich NIght! BBQ beef sandwich on sub roll with sauteed onions & peppers and melted provolone on top. The soup is homemade veggie soup that I made last night. We are also having a fruit salad made with raspberries, blackberries & strawberries bought at Aldi this morning.

Tuesday: Breaded pollack fillets, rice and salad (with yummy butter lettuce that I bought at Aldi on Monday as well as cucumbers, carrots, tomatoes, onions, black olives, croutons, Parmesan and dressing of choice.

Wednesday: Chicken enchiladas, corn, salad

Thursday: Spaghetti, garlic bread, broccoli florets

 Friday: Teriyaki tofu, egg rolls, sauteed veggies  (probably zucchini, mushrooms and onions)

    Faye- :-) They really do look like flowers! And good to know on the Aldi fruit prices.

    Jdouglas- that pulled pork sounds so good! I've never had it Asian style- yum!

    New England style ham bone/navy bean soup! The ham (opposite of shank end - couldn't print it LOL) was on sale at Food Lion a few weeks ago for $1.27lb., dh double smoked it, enjoyed it with meals/sandwiches, saved the bone, put it, the beans, diced carrots, celery, onions, brown sugar, powdered mustard, other seasonings in a crockpot and let it cook overnight - oh, smelled so yummy this morning! It is my all time favorite soup!

    It's hard to say whose dinner sounds best, but I think Observant's cake definitely wins the prize! Please send some this way. :)

    I was going to suggest chocolate dipped candied orange peel to use up some of your orange abundance. You can always add some of the fruit to salad.

    Dinner tonight is pulled pork in an Asian flavored bbq sauce with some broccoli thrown into it and some rice on the side. I found a pork roast in the freezer from a sale a while back.

    And I am so happy the Aldi in Garner opened up so I can stock up on fruit more frugally! We went through 2 containers of Blackberries, 1 container of raspberries and 16 oz of strawberries today! And the cost for all of it was less than $5 with the Aldi prices!

    RFB - I love the name of your dinner tonight. Chicken Lasagna Petals sounds so cute!

    davidhall82 - I make the veggie soup a little differently each time I make it. It really depends on what's in season and what I have in the house. It usually consists of the following:

    To a large pot I add:
    2 cans (28 oz each) of diced tomatoes including the liquid
    4 cups chicken broth (using bouillon)
    1 can corn with liquid
    1 can green beans with liquid
    8 - 12 oz sliced mushrooms
    1 large or 2 medium onions 4 carrots sliced 4 stalks celery sliced 1 zucchini sliced 1 yellow squash sliced lots of garlic powder lots of pepper Italian seasoning to taste

    Then I bring it to a boil & then immediately turn it way down to a simmer, uncovered for about 2 hours.

    Before the soup is done, I cook some pasta (usually large shells) in a separate pot (not in the soup). Then add some pasta and soup to a bowl & top with Parmesan!

    I baked a bundt cake - adding fresh squeezed OJ to the cake and a glaze with the OJ and bits of orange in it - it smells wonderful !

    Faye- what a perfect dinner for this chilly afternoon! Also, I'm going to have to check out Aldi... it's been too long.

    Tonight we're making my Chicken Lasagna Petals with the poached chicken I made from the Target whole chicken markdown. And broccoli on the side.
