    You know, Ascherer, another perfectly reasonable option is to alert all of us when it is Baked Ziti Day and we will join you for dinner. I am pretty sure there will be no leftovers to worry about. Problem solved! lol

    Thank you all for suggestions. I think I am going to have to freeze half whenever I make it. I just can't manage to use less cheese (even when I use less noodles). DH calls me mouse because of my love for cheese.

    Everybody's meals sound delicious. we are having leftover baked ziti. ;-)

    Ascherer, I think you are I have a lot in common when it comes to making too much baked ziti. I can't seem to make a reasonable size pan of it either. For that matter, I can't seem to cook for less than an army any time I cook! ;) Personally, I don't think baked ziti freezes very well, but that's JMHO. Years ago I used to freeze small loaf pans of homemade mac & cheese, and that worked well, but that doesn't help with your abundance of baked ziti.

    We finally finished the pot roast/stew last night, and I haven't got a clue what I'm making tonight. I need to step it up though, and come up with something. We've been having way too many ridiculously late dinners recently.

    If I remember to get the chicken out of the freezer, we might have roast chicken tomorrow.

    All these dinners sound so good! And can't believe it's already 3... the day is flying!! Tonight I'm doing Asian Beef Lettuce Cups. And DH will probably have his leftover tri-tip from yesterday (he's addicted lol!)

    I believe I am having leftover homemade soup from Saturday. I made a huge stockpot. After giving a big container to my daughter, two containers to my neighbor, we still have four containers to eat (and I froze a huge container).

    Asherer - I would partially cook the ziti before freezing - texture of noodles is better when you reheat .
    I have only made baked ziti once and did not freeze the leftovers but I freeze lasagna all the time (whole partially cooked and meal sized portion leftovers).

    Tonight we are having the breakfast for dinner I had planned for last night but did not make. We still had some of the giant roast left over so we finished it up with pasta. Tonight it's scrambled eggs (with mushrooms and green peppers), biscuits, turkey bacon and fruit salad with strawberries, mango and banana.

    Wenchmaid - let us know what you think about your new recipe.

    ascherer - I am with raesmom and twoboysandadog. Cut the recipe in half or freeze half of the full recipe (if using ricotta). Yay for baked ziti!

    wenchmaim-yum! we love curried lentils! Are you making green or red? I normally have them with couscous.
    Ascherer- you could freeze it if its made with ricotta. Like raesmom said, the sour creme will change the consistency of it. Next time I would just cut the recipe in half or even a quarter.
    Per Mr. Nichols request, tonight we are having chicken marsala using chicken, fresh mushrooms, white zinfandel, herbs from the garden. We will have it with mushroom risotto, and a kale, spinach, pecan, tangerine, and blueberry salad.

    First time trying this-curried lentils served over brown rice. I don't usually make vegetarian meals, but this sounds so warming on a cold rainy day.
