Jdouglas- that salad sounds delicious! And fun on the Toad in the Hole... haven't heard of that before :-)

Tonight we are having baked Parmesan crusted chicken (blsl), with twice baked potatoes and butter beans. Chicken was bought on sale in a multipack and frozen in meal size portions. Fresh Parmesan is the last of it in the fridge. Butter beans were bought by the case and split between Momma, Aunt Jerrie and us.

Just read the Sunday What's for Dinner post. How did I not make it on the blog yesterday?

Observant, if you're here, I make the white sauce and add cheese just as you do -- except I use extra sharp cheddar, some dry mustard, a few shots of Worcestershire, and it usually turns into mac & cheese! LOL But it is the same idea. I love the parm on top. BTW, I think it's on sale at HT right now... I will take your good advice and cook the potatoes before I add the sauce. Thanks!! :)

Faye, I hope all your sick folk are doing better!

Last night we had Toad in the Hole, aka Yorkshire Pudding with breakfast sausage links baked into it. My Mom used to make it back in the day. We also had a salad with romaine, orange slices, pomegranate, and a pomegranate balsamic vinaigrette. It was so good and refreshing. I could eat it every day.

Tonight, if I every get into the kitchen, is beef veg barley soup made with some leftover steak from the freezer. I really should have started it at least a couple of hours ago, so it looks like dinner will be late again. I might make biscuits to have on the side if I don't find some bread in the freezer.

Hope to finish up leftovers tonight. The kids are close to going postal on us if we don't cook a new meal soon. Well, I did make chicken fajitas last night but we've had a lot of leftovers the last few days. More of that tonight, left over chicken, baked potatoes, wild rice, turnip greens, black eyed peas and green beans. I'll tell them if they eat good I'll make a new meal tomorrow. :o)
