    RFB - thank you for the sweet potato info. :-)

    I got home too late tonight to make the breakfast casserole and kale so it's on for tomorrow night. I just ate a bowl of Special K vanilla almond cereal with Cottle Farms local blueberries for dinner! lol It was actually delicious with those blueberries!

    JTLNSW- thanks for the Magnum reminder! I was at FL today and was able to get 2 :-)

    Faye- I normally just roast with EVOO & salt. But, f I have any limes on hand, sprinkling on the zest from one adds such an awesome flavor, too!

    jdouglas- your leftovers do sound yummy!!!

    Jdouglas - thanks for the sweet potato tips! Lemon pepper and garlic sound great on them. Your leftover pot roast sounds yummy.

    Tonight is leftover pot roast, mashed potatoes, and something green to DW's delight. ;) Cake for dessert.

    Faye, if you have any lemon pepper and some garlic powder, sprinkle both on your sweet potatoes before roasting. Delicious!

    Always, have a great trip! Your sausage and gnocchi soup sounds so good.

    It's been a while since I made gnocchi. I have to make enough room in the freezer to put a half sheet pan in first thanks to a recent sale/coupon deal on Magnum bars. :)

    I am making a sausage gnocchi soup for dinner tonight. Trying to use up the carrots and other veggies before vacation. Leftovers tomorrow. Gumbo on Wednesday with a side of rice. Thursday will be burritos as it is our last night home this week. Friday we are on the road and will stop off somewhere between here and Chicago.

    Tonight it's Meatless Monday for us: Egg, cheese and veggie breakfast casserole and Spicy Braised Kale on the side using a recipe that was in the produce box from Lowes Foods on Saturday. I will blog about the box later today with photos. Here is the recipe for the kale: - those roasted cubed sweet taters sound wonderful! Do you just use EVOO and salt or do you add anything else/different to them before roasting?

    We'll be finishing up the grilled steaks and chicken from yesterday with garlic mashed potatoes and peas. And Magnum ice cream bars for dessert :)

    Tonight we're doing a roast chicken and on the side I'm roasting up some cubed sweet potatoes and eggplant (from HT sale), and a salad with a buttermilk dill dressing.
