What's for dinner Monday?

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

This week we are having:

Monday: Chicken Teriyaki with chicken breast and veggies served on noodles with watermelon for dessert

Tuesday:  Dinner at a school function for 2 of us and turkey and cheese sandwiches for the other two with a side of Green Giant cheesy rice and broccoli

Wednesday: BBQ chicken in the slow cooker served on Sister Shubert's rolls with sides of mac & cheese and salad (HT and Kroger have red and green leaf lettuce for .99 a bunch through Tuesday)

Thursday: Grilled sirloin steaks, mashed potatoes, sauteed zucchini, onions and mushrooms

Friday: Pizza night! Veggie pizzas with a side of salad and fruit

    RFB -- actually the dried tomato recipe I had in mind called for tossing halved grape tomatoes in a bit of EVOO and salt, and baking them for 5 hours at 300 degrees. Would you say that yours resembled sundried at all? Glad you allergy testing is getting some good results for you!!

    Raesmom, poor Rae. Give her a big smooch and a handful of extra soft tissues for me. :)

    Tonight's dinner is bone in pork chops in sausage country gravy mashed potatoes and peas on the side along with Pillsbury biscuits.

    jdouglas~ these allergies are pretty crazy. I hope you are felling better soon. Poor Rae was outside for all of 5 minutes and her nose was dripping so bad!!

    Jdouglas- thanks for asking! Things are a bit better, I'm actually eating some things now without problems, that I haven't been able to for years... like apples, and grapefruit :-)

    As far as the tomatoes... so easy! Just cut them in half and place in baking dish (I used a glass pie plate). Drizzle over some olive oil, then salt and pepper. You can add sugar too, hence the "candied" (but I didn't, as they already get nice and sweet). Then roast at 250 degrees for 5 hours- yes, 5 hours!!! I just put a video up on the blog with a photo, if you want to see what they look like. Let me know if you try them!

    And so sorry you're feeling bad. Did you see the deal on Zarbee's from Target? It's a natural remedy, and maybe worth a try as it's almost free (if I'm remembering correctly).

    Twinredheads- that is amazing on the lettuce... I bet it's delicious straight from the garden!

    I finally settled on Shake-n-bake bone-in pork chops, corn on the Cobb, and slightly creamed peas and potatoes (I don't like them real soupy). Trying to bulk up hubby who is getting ready for surgery in a couple of weeks.

    Chicken soft tacos for the family, chicken taco salad for me. Just LOVING being able to eat lettuce from our garden :)

    RFB, have you had any luck with your allergy testing? I really feel for you. I have a few myself. I'm not sure which is worse -- food allergies or bee sting allergies. Also, please share the details on your candied tomatoes! I've been thinking about trying to oven-dry some, but candied sounds interesting.

    Last night was steak on the grill shaved for DW, a nice soft baked sweet potato for her, rice for me, and a salad with yet more greens from the garden and the $1.77 grape tomatoes from HT's weekend evic.

    I'm feeling super under the weather today with allergies, so something simple tonight. Maybe pasta carbonara with broccoli. Bacon from the freezer, and eggs from HT's sale this week. Got to get some parm out of the freezer too. Hope HT has a sale on reggiano parm soon because my stash is getting frighteningly low.
