Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

On our menu this week we are having:

Stir-fry tofu and veggies including asparagus, mushrooms and onions served on brown rice (Monday's dinner)

Breakfast for dinner with French toast, turkey bacon, fruit salad

Chicken enchiladas with rice and salad

Baked ziti with garlic bread and salad

Salmon, wild rice, steamed carrots

    Raesmom- thanks for asking!! We're finally starting to feel "normal" again... can't believe this was a full week of yuck. And that chicken sounds great! They were out of the sauce last time I went, so I'll try again today.

    Tonight I think we'll do Cilantro Shrimp Quesadillas with Mango Acocado Salsa using some BOGO shrimp I got at FL, and a mango for $1 at HT. I have most of the rest on hand. It's really yummy- here's the recipe if anyone wants to try it. (You could use the Wholly Salsa on top as well :-)

    Just HAD to grill because of this beautiful weather! Got a good deal on Bavarian sausage at Lowe's and served that with corn on the cob and baked beans. Just getting a jump on summer :)

    tonight I made sweet chile chicken breast using the free at HT SD's this week franks sweet chile sauce and chicken breast from b2g3 free sale a few weeks ago. Side of free pictsweet veggies and cheap (less than $1) uncle bens rice. $6 for dinner for three plus lunch tomorrow for one....not too shabby :)

    I had a change of heart for tonight's dinner. We had beef stroganoff with steamed broccoli instead. It was quick and easy.

    jdouglas13 - Anytime! But my youngest came home early from school with a sore throat so it's an Enter at Your Own Risk offer. :-) I'll bring some to the picnic if you help me remember!

    Ascherer, have not tried the crab cakes (allergic to most crab), but a Friday dinner option could be Caesar salad with shrimp and a side of garlic bread. We have it a lot in the summer, and if it's warm, may have it tonight if I get to the store for some romaine hearts.

    Faye, your tofu sounds good too. I keep meaning to try it. Can I come for dinner? ;)

    Tonight we are having stir fry teriyaki sesame tofu and veggies on rice.

    For once I have a weekly meal plan. M= Meatloaf with veggies on the side. T = DH's Knights of Columbus family night at Lone Star. W = Is dinner at my FIL house. TT = I think homemade Chinese or chef salad (aka clean out the fridge night) F = Crab cakes from Kroger and shrimp with veggies.

    I got deals on most of them on sale. Curious to see how the Kroger's $1 crab cakes are. Has anyone tried them? I was just looking for something different to serve a good Catholic boy (DH) on a Friday during Lent.
