Monday dinners and weekly meal plan

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

Here is our menu for the week in no specific order:

Spaghetti with meatballs, spinach salad and garlic bread (this is Monday's dinner)

Baked creamy mushroom chicken breasts on egg noodles with broccoli florets

Baked omelet with turkey bacon, green peppers & mushrooms

Homemade veggie pizza with spinach, mushrooms, roma tomato slices and onion

Chicken salad sandwiches, pasta salad, fruit

Grilled turkey hot dogs, mac & cheese, steamed carrots, orange slices

    Raesmom- thanks, I will check and see which of those stores is closer! And interesting on your method! I also read something about pouring eggs on top? A very interesting dish at that, but always up for something new... and overall it sounds amazing! Appreciate you :-)

    BlueDeviIs00 - I think that meal sounds great! If someone else is doing the cooking every once in a while, ANYTHING sounds great! :-) Thanks for posting your meal.

    RFB i usually get mine from the international food store (one on Atlantic, another on Fayetteville St going towards Gardner Walmart) super cheap too!! Most people fry them and mash them but im not a "fryer" nor do i mash them be i feel it takes the sweetness out. I simply cut the plantain in half long way, then in half short way, layer the bottom of a 9X9 pan, add my meat (let me know if you need a receipe for that), then my cheese (slice or shredded), then more plantains and in the oven it goes. Im sure there are lots of varieties or instructions on how to layer but its to your liking :) Im here if you need me

    Raesmom- thanks for the tip! I did a bit more research last night, and read similar things... I've never cooked with plantains!!! :-) Excited to try it if I can find them.

    Twoboysandadog- that sounds really good! I love my crock pot too :-)

    BLUEDEVILSOO- I totally think lettuce and tomato will pass :-) But, I will say my DH loves those broccoli steamers. So easy, and add in a bit of butter, salt and pepper after, and you're good. And I'm a sucker for tater tots- I'll have to swing by the frozen aisle tomorrow! Thanks for the heads up.

    LOL BlueDeviIs00!!! I wish you luck....maybe you can call my hubby and remind him that it is ok for him to cook any other day of the year besides Thanksgiving and July 4th, even if it it just sandwiches :)

    Wife is super busy tonight so it's Dads time to cook! Which means we will be having BLT's (Bacon was BOGO at HT), using Light Mayo, and a side of tater tots (on sale at HT). I debated having a salad as well but I think the lettuce and tomato will pass for enough veggies? If it's not up to par for my wife i can add a broccoli steamer I picked up yesterday. Wish me luck, it's been months since I've cooked! :)

    jtln- i also make a recipe that is similar that my family loves:

    can of corn(drain)
    can of black beans(drain)
    small jar of salsa
    3-4 chicken breasts(can be frozen, no need to thaw)
    cream cheese(optional)-add in last 30 mintues
    throw all in crockpot and cook on low for 8-9 hours. You can serve in tortillas, burritos, eat in a bowl, or over chips.

    With two boys playing ball....we are a crockpot family :)

    Velveeta Skillet dinner (cheap @ HT), deer "hamburger" (free), frozen sweet white corn($1.00 @FL) and steamed veggies
