Spinach and Scallion Cream Cheese Omelet

 

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

This week we will be enjoying:

Monday: Chicken salad sandwiches (with leftover chicken breast cooked in slow cooker this weekend and bought for $1.99/lb on sale at Lowes Foods through 3/4) on rye bread with provolone slices, sweet potato tater tots (bought during Super Doubles), side salad (with a yummy avocado that is on sale through 3/4 for .59)

Tuesday: Beef stew in slow cooker, Sister Shubert rolls, green beans

Wednesday: Philly cheesesteak sandwiches, tomato soup, orange slices

Thursday: Turkey breast fillets, sweet potato casserole, rolls, green salad - this was on our menu last week and we didn't end up having it so here it is again :)

Friday: Breakfast for dinner! Spinach and Scallion Cream Cheese Baked Omelettes with Grape Tomatoes from Diana's Spoonful of Luxe recipe a few weeks ago. You can find the link to the recipe above. I have made this as is and with different veggies and turkey bacon added and it was a hit every time! My kids even love it.  Sides of biscuits and fruit salad.

    Raesmom- glad Aldi is close, we've got frozen rain coming down as I type- be safe! And wow, all these dishes are making me hungry!

    Jdouglas- great reminder on blueberry coffeecake... I still have some left from Fresh Market that I need to use ASAP :-)

    LOL, Faye, I pulled out one of the chuck roasts that I bought on BOGO at HT a month or so ago to make a crockpot of beef stew tomorrow! And I've been waiting for a cold snap to do that, since beef stew was always a winter dish when I was a kid, along with Mom making campbells tomato soup and grilled cheese for lunch after she peeled off all our snow crusted clothing from playing outside!

    We're attempting a bit more solid food for DW tonight. Medium rare burgers, mashed potatoes, and salad for me. Pudding for dessert for DW, I'm having blueberry coffeecake.

    Beef stew sounds delish Nakabi and Faye!!

    I pulled out chicken leg quarters for tonight, may be smoothered with gravy some mashed potatoes, biscuits and veggies.

    Gonna run across the street to Aldi to buy stuff for beef stew tomorrow :)
