What's for dinner Monday and weekly meal plan

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

On the Prosser menu this week, we will be serving:

Meatless Monday: Baked ziti, green salad, garlic bread (Prego pasta sauce is the HT e-Vic deal through 2/18 with .75/2 coupon, Pepperidge Farm Garlic bread is only .49 with sale and coupon at HT through 2/18, pasta was free with sale and coupon recently, all veggies on sale)

Tuesday: Chicken Tikka Masala from evol (great deal at HT last week), side salad

Wednesday: Honey teriyaki stir fry tofu and veggies (including more asparagus for $1.49/lb from Lows Foods through 2/18) served on a bed of brown rice

Thursday: Chicken tacos, Spanish rice, cantaloupe

Friday: Homemade veggie pizzas, salad

    jdouglas, The recipe is just 2 cups all purpose flour, 1/3 cup water, 1 egg and 1/2 teaspoon salt. May need a little more water to moisten the dough. Knead until elastic then divide into 2 rolls and let rest under a damp towel for about 10 minutes. I used the pasta press to save time rolling the dough thin enough. Then I cut them into 3 1/2 by 3 1/2 inch squares and filled with 1 teaspoon of mix. Pre-boiled them before adding to the soup.

    The pasta presses I have seen (for KitchenAid mixers as well as freestanding models) it seems the widest width is 6-7.5" - and for the cost (KitchenAid is outrageous as always), it's another item I'd have to find a place for AND clean after use plus I would still need to roll out the dough wider anyway :( I so wanted to do a pasta press for things other than pasta items but I think finding how narrow they roll width wise made it an easy decision for me.

    But having said all that, there is NOTHING so good as fresh pasta! World of difference. I think I'm talking myself back into the idea of the attachment for other uses than rolling out dough for stromboli/pizza items ;) Then I would want to get a drying rack....and .... LOL

    jdouglas- on the pasta roller, I am pretty clueless! A bunch of my friends have the mixer attachment, and they love it. If you find a good one that you like (or has a BOGO deal that we could split) let me know!! :-)

    Honestly, it looks like they took out half the produce department, rearranged it a bit, and washed the floor. I wasn't really impressed. It's my least favorite LF and the customer service is awful. OTH, the Garner store is wonderful. We are at Target White Oaks often enough that it's not much further for us to swing by there. The store is a bit older, but clean as a whistle, great customer service, and well stocked.

    $1.27/lb - Oh My Word - best price I have seen on asparagus in ...hmmmm..... FOREVER! Awesome score jdouglas! Did you notice anything different with the "re-opening?" Does the store look any different/fresher?

    AlwaysAB, how did I miss that you made the wonton wrappers! Would you share your recipe please for the wrappers?

    RFB, you and I are on the same page again about needing a pasta roller. Maybe if we go in together and each get one, we'll get a quantity discount LOL! Seriously, though, do you have one in mind that you like? I keep going back and forth between the Atlas hand-cranked model and the KitchenAid mixer attachment with the roller and cutters.

    DW doesn't know it yet, and probably won't be happy, but I think tonight is old faithful - mac & cheese. I bought about 5 lbs of asparagus today at Lowes Clayton as it was part of their grand reopening sale, and $1.27/lb, so maybe we'll have asparagus instead of the usual broccoli side.

    We are trying the hawaiian luau (sp??) slow cooker sauce from campbells today. Been in the slow cooker since this am so we shall see. Over rice and green beans on the side (per the suggestions on the package)

    I'm with everyone-that wonton soup sounds good! RFB-if you lived closer, I'd be happy to give you some pinenuts :)

    Decided to make parmesan crusted tilapia using the tilapia from Aldi, orzo pasta (thanks for the idea RFB), steamed artichokes, and caear salad. (I have some romaine lettuce that is frightfully close to death's door and is begging to be eaten!)
