What's for dinner Monday and weekly meal plan

Posted February 10, 2014

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

Here's our menu for the week:

Meatless Monday: Baked spinach ravioli with a side salad and rolls

Tuesday:  Chicken tacos with rice, corn and orange slices

Wednesday: Italian turkey breast tenderloin in the slow cooker with baked sweet potatoes and a side salad

Thursday: Ginger sesame tofu and veggies with egg rolls

Friday: Baked omelet with turkey bacon, cheddar, mushrooms and green peppers, biscuits and fruit salad using the basics of the Baked spinach omelet posted by Diana in her Spoonful of Luxe post last week. You can see the link to her recipe above.

JDOUGLAS13: I purchased store bought blackening spice some time back. When I run out I am going to find a recipe on-line (there are several) and make my own. Probably much cheaper overall.

I have some shrimp on the freezer. With all of this shrimp talk I think that will boil some in Old Bay with potatoes and some kind of veggie on the side.

Nakabi- yum! Think I'll need to try them grilled this week on my French pizza!

Nanny113, what a yummy recipefor the blackened shrimp. What are you using for your blackening spice?

Tonight is steak salad with Asian dressing made with leftover London broil, grilled asparagus, and wild rice blend. Except for a little chopping, it's a nice easy dinner with minimal cleanup. Of course, probably a more appropriate dinner for the weather would have been something hot like soup! Maybe I'll make some garlic toast for a non-cold side.

RFB-yes, I spray them with a little EVOO/and rub them with some fresh garlic and seasonings & herbs. Grill them whole until the tips start to darken just a bit. Sooo good!

I'm getting so hungry reading these!!! And Nakabi- how do you grill your Brussels? In a grill pan whole? Sounds delicious!

We're having one of the easiest recipes ever. Greek Chicken with Grape tomatoes and Artichoke Hearts (all from past sales or leftover).

I put chicken breast with buffalo wing sauce in the crockpot this morning. Going to eat in burrito wrap with lettuce and cheese with a side of chips and salsa.
