What's for dinner Monday and weekly meal plan

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

Here is our menu for the week:

Meatless Monday: Penne pasta with marinara sauce, garlic bread and green salad.

Tuesday: Baked lemon basil salmon, saffron rice, green salad

Wednesday: Turkey subs, macaroni salad, steamed baby carrots

Thursday:  Baked chicken, sweet potatoes, steamed broccoli

Friday:  Homemade veggie pizza with mushrooms, onions, green peppers and spinach

Saturday: Spinach and cream cheese omelette (see link for recipe from A Spoonful of Luxe above)

    Nanee Lion, you could easily make breadsticks with your remaining pizza dough. Basically, pizza dough is no different than bread dough.

    Faye the pizza was wonderful and we are sooooo full. Had a coupon for $1.00 off produce so bought a bag of salad from Lowe's and made salad too. I did cut the dough ball into two pieces; however, we could not use two pizzas. Has anyone ever made bread sticks with this dough? Need to use the rest of it soon. I may try some bread sticks with butter and garlic to see what happens. Hey since I split it, we are only talking about .50. Yes we are feeling better from our sickness, thank goodness. Thanks again for your help with the recipe. I printed it for future use.

    jdouglas- that's funny... I almost added kale in the omelettes, thanks to you!

    And we're doing the Turkey Chili we were supposed to do last night (got too full from Super Bowl pre snacking!) Ground turkey and onions on sale from Kroger, chicken broth and white beans from past HT sales, cilantro always inexpensive at Food Lion.

    jdouglas-Rosemary is a must when making pizza!!! I absolutely adore the smell of it! I keep some in a container in the kitchen just so I can sniff it!
    Good idea on the eggs and pancakes Faye! I made bluberry/chocolate chip waffles this weekend and the kids devoured them! There's just something wrong about eating chocolate for breakfast, but my son insisted it would be "quite delicious in your tummy mummy" lol...I made a couple without the chocolate for myself lol.

    That's a good idea, Faye, thanks. Maybe RFB's omelet. I don't have spinach, but I have a bit of kale I can sneak in and DW can pick it out. ;)

    Nakabi, why have I never thought of rosemary for pizza? Especially white pizza! Yum!

    jdouglas - how about eggs and pancakes? Those are gentle on the tummy and don't involve garlic. Good luck at the dentist.

    Leftover lasagna for us. I made a huge casserole dish yesterday and it was only the two of us. I had all the ingredients on hand from previous sales - eggs, spaghetti sauce, italian sausgage, ricotta cheese, shredded cheese. We'll just have a side salad and be set. The kids didn't come over yesterday as expected -- went to their friends for the Super Bowl -- but they are coming tonight.

    I have a dentist appointment tomorrow, so I'm trying to think of something without garlic. :p Let me tell you, there's not much I make that doesn't have garlic in it. The original plan was going to be stuffed shells from the freezer I made a while back with a salad on the side. DW is on some new meds that are killing her stomach, so I'm trying to think of something to accommodate that as well. All I can come up with is burgers, mashed potatoes, and salad.

    Faye-Mr. Nichols is actually a very good cook and we love to cook together. We are teaching our chilldren how to cook and we love all being in the kitchen.
    Nanee Lion-enjoy your pizza! I love making homemade pizza!!! With lots of fresh rosemary of course :)

    Meatfull Monday- there is a 3 lb roast roast in the oven now, carrots and potatoes standing by.

    Buttered egg noodles and fresh yeast bread- yum!
