Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

On our menu this week we will be having (in no particular order, because it's just that kind of week!):

Baked cheese ravioli, green salad, garlic bread

Chicken teriyaki, brown rice, steamed veggies, egg rolls

Salmon burgers on buns, green salad, sweet potato fries

Chicken and cheese quesadillas with sauteed peppers and onions, corn and tangerine slices

Garlic shrimp and asparagus on whole wheat linguine (using the last of the $1.99/lb asparagus in the freezer)

    jdouglas, my sons could have that every night if I offered. They love it. I will have to try that with fish, maybe my youngest would eat fish that way (he only eats tuna).

    Meredith, when I saw your menu, I remembered I promised you a pizza dough recipe and never delivered! I will definitely post it this week in one of the "What's for dinner" threads.

    Tonight we had spaghetti and sausage with not a trace of turkey in site! Yay!! lol

    Scoutmom, there is something magical about mayo and cheese when spread on a protein and baked. It is so good, and when you taste it, you'd never think it was mayo. I've used mayo and then a Italian seasonsed breadcrumb and parm mixture on fish (like a filet of sole or flounder) and it was soooo good.

    RaleighFoodBlogge - your chicken creation tonight sounds great! Glad it turned out well. I am totally going to make some of that corn salsa.

    We had baked ravioli, rye bread slices and fresh pineapple (price matched Aldi .99 deal at WM last week and I realized tonight it really needed to be cut and eaten).

    I scored a bunch of marked down meat at the Lowes Foods in Cary on Cary Pkwy and Tryon this evening including Butterball turkey tenderloins (still had .55/1 coupon from their FB page), flat iron steak and ball park low fat smoked white turkey hot dogs. Almost all of it went straight to the freezer for use this weekend or next week.

    Tonight we had lima beans, baked chicken covered with a mix of mayonnaise and shredded italian cheese, and salad greens with tomatoes, (mine also had apples, pecans and sunflower seeds and rasberry pecan salad dressing).

    nakabi- it turned out great, but we liked it a bit more simple in the end! For the chicken- I marinated in olive oil, balsamic, green onions, cilantro, lime juice, salt, pepper, and red pepper flakes, and then after a few hours just poured into a skillet and stir fried.

    Then for the corn salsa, just defrosted corn and added red onion, lime juice, cilantro, and some seasoning of choice. I tried it w/the herbed cheese and the red onion dressing. But honestly, it was better as just the chicken and corn salsa on top of a fried flour tortilla w/a bit of lettuce and a drizzle of olive oil. My DH LOVED it! :-)

    Tonight is homemade pizzas on the grill. Dough ball from a sale at HT, the last of some home made marinara sauce, cheese from B2G3 at HT, and fresh onions, peppers, and mushrooms from a sale at Aldi a few weeks ago.

    Turkey and broccoli alfredo over angel hair pasta with leftover turkey of course. Yesterday we had turkey white bean chili and it was yummy!

    I working on a new recipe... a Mexican Fusion Pizza with cilantro lime chicken, herbed goat cheese, corn salsa, shredded lettuce and a red onion dressing all layered in and on 2 fried flour tortillas. Canola oil was BOGO from FL, chicken BOGO FM, the rest pretty much had on hand :-)
